Carrot Cake:No butter sweets

- Aromatic carrot cake with lots of cinnamon.
It is easy to make without butter & ground almond.
The key to making it moist and delicious is to thoroughly mix the eggs and olive oil at the very beginning.
▷Ingredients:
■carrot cake
100g grated carrot
2 eggs
30g olive oil
50g cane sugar
pinch of salt
80g cake flour
5g cinnamon
5g baking powder
50g raisins
50g walnuts
■Frosting
100g cream cheese
9g powder sugar
▷How to make:
Grate the carrots, peeled and grated. Wash raisins in hot water and drain. Coarsely chop the walnuts.
2. Beat the whole egg, add olive oil and mix well. Add the light brown sugar, salt, and grated carrot and mix well.
3.Add flour, cinnamon, and baking powder. Add drained raisins and walnuts.
4. Line a baking pan with a cookie sheet, pour in the dough, and bake in a preheated oven at 170℃ for 35 - 40 minutes.
5. Unmold and allow to cool.
6. Mix cream cheese with powdered sugar and spread over cooled carrot cake. Decorate with cinnamon and pistachios.
