Aloo beans ki sabzi is a mildly spicy stir fry dish made of french beans cooked with potatoes.
This dry mix vegetable is a quick and easy recipe which can be made when you are short of time. This is a simple bean recipe that does not call for much time or many ingredients. Together with the french beans and potatoes, you only need fewer ground spices that are easily available in an Indian pantry.
For some tanginess in the dish, we add dry mango powder. Dry mango powder is also called ‘amchur’ in Hindi. If you do not have dry mango powder, simply drizzle some lemon juice once the aloo beans dish is complete and done.

Note : Please add a pinch of asafoetida before adding sliced garlic; my camera missed capturing that step.
Ingredients :
300 gms Green Beans (strings removed, washed & cut into 1 inch pieces)
400 gms Potatoes (peeled and cut into 1 inch long pieces)
3 tbsp Vegetable Oil (use as per your diet restrictions)
½ tsp Cumin Seeds (jeera)
Asafoetida a pinch
15 nos (20 gms) Garlic - sliced
3 nos Ripe Chillies (punctured or slit) - you can use the normal green chillies)
1 sprig Curry Leaves
½ tsp Turmeric Powder
1.5 tsp Kashmiri Chilli Powder
½ tsp Garam Masala Powder
½ tsp Salt (use as per taste)
1 tbsp Lemon Juice (use as per taste)
Note : tsp is teaspoon
tbsp is tablespoon
Use Oil as per your diet restrictions
Use Chillies as per your spice preference
Always wash curry leaves & coriander leaves before use
