Also i would like to put the buttercream in the cake as my filling and cover the cake before i put the fondant on it, will it stay or should i use something else to frost the cake?

I tried to get the Bailey's, but they wanted 30 bucks for the bottle, and since we're not drinkers in my house, I wasn't going to pay 30 bucks for a bottle that I only needed a few tablespoons from. Instead, we found a cheaper brand: Merry's. The flavor we got that I didn't realize it was until we got home was Merry's White Chocolate flavored Irish Crème. With this, the frosting came out AMAZING.

Yes, the Guinness is at room temperature. You could try to use Hershey's coco, but I'm not sure if it is cocoa powder or powder for chocolate milk. If it's for baking you will be fine...but if its for chocolate milk, you might want to go and get some cocoa powder from the store :)
When you said you are going to put the chocalte and beer mixer a side to cool, did you put it in the fridge, or did you mean to set it aside. I got a bit confused.
That's up to the parent of the child. Obviously there is alcohol in the cake (which is cooked out during the baking process), but there is alcohol in the buttercream, which is not cooked out.
Making these today, only I'm using dark brown sugar, and a bit of caramel extract to complement the Guinness. I'm also making Donal Skehan's white chocolate cream cheese frosting with Bailey's coffee creamer instead of straight-up Bailey's.
