She had already boiled the rice, therefore, defeating the purpose. Basmati rice is cooked in steam for the last 15-20 minutes depending on where the basmati rice come from. In this case, there was no reason to steam unless the rice was half cooked.

In traditional method they fry them in a lot of oil and for long time but I personally prefer to fry them with a little bit of oil and for shorter time to make it more healthy. Are you Iranian-Jewish? You do look it : )). I've made this Persian rice dish before. Mine turned out ok, for the first time. I know they also use a lot of saffron and yogurt as well and I bought some threads when I made the dish before. Interesting, dish with the potatoes at the bottom. As a European, we have pilaf and rice and potatoes don't mix, but these oriental recipes are totally unique.
You use a lot of greens in your recipes I have noticed, I see, bought from the supermarket, have you thought about supplementing them with hydroponic (window pots)? You could grow them inside, it's a really cheap and fun project for the kids and no dirt! (Even if you have a black thumb). The same goes for making scallions/chives (just old garlic cloves/onion bottoms that have started to sprout, you can grow them the same way. (I rarely buy herbs anymore, just use from the window or buy dorot frozen herb cubes as backup (the geffen ones add lemon) Another option - And/or , get a kit like Hamama that's more for microgreens (they are so yummy and you can even keep it in your pantry - plus I think they have an affiliate program so it would be a good thing for your channel).
What knife set do you have ? the way it chops herbs and meat looks nice and sharp. Great video as usual. You can definitely see that you give your all to your family and make delicious food 😋
In Persian the rice dish is called Bahgali Polo. My husband prefers it without potatoes on the bottom becauseas a Persian he never can get enough tahdig 😄. The stew is Ghorme Sabzi. It is very delicious. I do use the Sadaf brand dried herbs specifically for this stew. I soak them in water for about 30 minutes to rehydrate them then I sauté them with the meat for a few minutes before adding water to the pot. I add chopped fresh baby spinach to the stew about 30 minutes before serving it. The spinach gives the greens almost a creamy texture.
Would have been better to dry your meat, season it, and then fry the chunks to allow for caramelization. Then add onions to the meat drippings in the pan. More flavor like that. Would use beef broth instead of water also for more flavlr

Where do you get the large bunches of herbs? Our stores seem to have these small packages that are extremely expensive.
