Very nice review.
To be frank, I tried many Piano plugin. Searched for a proper sound .Lots to say but the summary is there are two plugins in the market today. One of them is Giant while the other one is Pianoteq. Giant is direct to the point having user friendly interface which lets to you get faster results. Joy to play. It is very interesting that I smell the wood when I play Giant. :))) Weird. Maybe it really complied with my piano sense.
Pianoteq is much more into details. Variety of parameters that provides many adjustment opportunities to professional piano guys. A bit softer sound.
Both are good plugins. Anyway, all depends on what user is looking for.

I up voted your comment because I agree totally with your conclusion. If I was only going for one VST it would be Pianoteq. Since I wanted a variety I went with Native Instruments. My Giant demo -
