I can't wait till game development gets to the point where dinosaurs actually grab and bite onto specific body parts rather than just flail at each other, sometimes clipping into each other, other times not even touching.

Half-Life 2(2004) had realistic physics and that was almost 20 years ago! I don't think it's a matter of if they're capable of designing a more realistic combat system but more a matter of if they want to spend the time and resources to. Never said it was easy but it's definitely doable.
