Same. I don't love the stuff in particular, as it's not tasting of much by itself, but it's a great addition to the cooking arsenal. Some things are simply made with it and are really nice to eat. No need to have meat on a daily basis. Asia has so many dishes that don't need meat to be outstanding.

It is cheese.... This process is exactly same with how you make Paneer from dairy milk, which is Indian Cheese. This process just takes Soy Milk instead of dairy milk.

Just think about the history of tofu. It's been eaten for 2000+ years. Things like that can't be hard to make, as machines or complicated processes simply weren't available. Had to be easy like baking bread or fermenting things like surströmming

I, an omnivore, eat vegan food nearly everyday and have my entire near 50 yrs of life...vegetables. I don't need to transform my beans into a block of goo. Now if somehow all the animals die off or I'm held captive and tofu is the only option for food that is slightly capable of resembling meat, bring it on!

i find it sad that most people link tofu to "vegan" cuisine or as a meat alternative, here in south east asia we see tofu as tofu, we have dishes like mabo tofu or tofu red egg (home dish) that features tofu as the main ingredient, not like the western "tofu burger" or tofurkey, and another point, soy products do not lower testosterone, that is a myth and there are numerous studies to counter it, it can however give you hypertension (soy sauce) and it makes you gain weight FAST if not taken in moderation.

I have been eating tofu for around 50 years. At almost 70 I srem to be doing fine. The reason I'm watching this is because the media says that store bought tofu is high in micro-plastics.☹️ The nearest health food store where I could buy it fresh in water is 50 miles away. Not sure I have the patience for this-might give it a try.
I've enjoyed experimenting with tofu dishes and grown to like it. It is way heaper protein source than meat is, which really helps with budgeting. I've heard fresh tofu is next level though and would like to try it some day.

We make it similarly in northern Nigeria but the different is the coagulant we add something different instead of nigari , we add fermented millet water, we call tofu(Awara) , after making the soy milk we add it to the fire if it’s start to foam we use a spatula to bring the foam down after 40 mins to 1 hour of cooking we add the fermented millet water to it and it coagulates we strain it with a muslin cloth and press with a stone and then is ready 😊

When I first say the recipe for tofu I realized that it's more similar In the process to mozzarella then I thought 😅 but for some reason it's easier to buy silken tofu here then soy beans, and there's only one physical store I know about that sells it, being a drugstore

I got a very “saturated” funky flavor by the time I made it to the soy milk / after filtration. Mind you, I was just trying to get rid of the 5 some odd pounds beans I had lying around so I think my water to bean ratio was off because I was making so much. But, TO THOSE WHO ARE GOING TO MAKE THIS: I reccomend going very low and slow with the boiling part of the recipe. I think my mistake was rushing it and burning the bits on the bottom. Also keep in mind (as she mentions on her site) this shtuff really doesnt come off the bottom of the pot easily 😂 so keep it moving pretty constantly.
I made my own nigari from boiling sea water and the last water left from salt making is the nigari. It tastes sharp and bitter on your tongue. STPP will give you smoother texture tofu. But nigari will last forever.
@@jayb.1124 Nigari is coagulant used by the Japanese to make tofu, like rennet to make cheese from milk. I made it by boiling 5 liters clean sea water. When the water is reduced and salt crystal formed, drain the salt. I got a cup of nigari and a cup of sea salt. Keep the water in a glass bottle and use it to make tofu. It won't go bad, just like salt. You can keep it forever.
The thing is, since when has tofu been an item in vegan and vegetarian diets from the perspective of western cultures? It has nothing to do with cheese nor is it a substitute for it and neither is soy milk for regular milk, they just happen to contain a lot of nutrients similar to each other while from different origins. Tofu is just tofu, not really needed to compare it to anything else and no need for debate or hate.

In Northern Nigeria, we call this awara. It’s sold as is(we say it’s boiled) or fried with a side of yagi and maybe grated cabbages,onions and tomatoes. Some with put spring onions or fresh scotch bonnets (or whatever hot peppers are available) in them before molding. One of our most popular street foods.

I'm Nigerian but I've never heard of awara before (well it's to be expected since I live in the south), I only know of moi-moi, which makes me wonder if awara is same as moi-moi. @@nickeni3050 Moi Moi is different from awara. Moi moi is blended beans with pepper, seasoning and oil steamed in a cup, banana leaves or nylon to give it a shape. Awara is soyabeans. Same process as above. But some fry it after cutting it into cubes or eat it like that. It’s quite popular in the North. Abuja, Taraba, Kaduna, Kano etc. The women selling akara and fried yam at night sell them as well.
I use the same mold. I used to use an immersion blender but after getting a Vitamix I've found the milk yield better and the okara finer in texture. I've used the okara to make bread but still working on the recipe.

I think they chose soy to hate on because plant based eaters use it often as a meat substitute. Many of them eat a lot of meat thinking it’ll make them more manly (others convinced it’s a very healthful diet). Not a new phenomenon! Back in the late 70s (or maybe early 80s) a popular humorous book came out called Real Men Don’t Eat Quiche. So funny also to hear the author in an interview say many didn’t get the humor and would ask him all kinds of advice on other foods and ways of “real men.” For years politicians and talking heads would smear an opponent just by saying he eats quiche. Funny eye roller, but also a very sad commentary on fragile insecurity!

The problem is, it doesn’t even have to be an alternative. It’s just a staple ingredient in east asian countries. We throw both meat and tofu into our stews too. Tofu wasn’t created to be a meat substitute, it’s just used as one.
Another thing what you can do with the soy curd is make a Korean stew call 비지 찌개 (biji jjigae) which means soy curd stew which is delicious with a side of rice. It’s usually not vegan, but to make a vegan version, just use vegan kimchi, mushrooms, green onion, soy curd, sesame oil, and veggie stock. PLEASE DON’T SLEEP ON IT! It’s really good and it’s not wasteful
@@gcook725 You can use it for tons of stuff! You can use it as a meat substitute, it can be used for baking, an ingredient in smoothies, you can put it in things like noodles, stir fry, fried rice. It's super nutritional and tasty
I always make tofu at home but the filter it before boiling the milk and pro tip don't boil the milk just heat it to high temperature and then make curd by adding vinegar or lime juice and when cooled wash it with cold water then press it this will give very smooth and creamy tasting tofu. Don't boil the soy milk. The foam is nothing but soy oil.

I definitely definitely wanna try everything that you cook, you make everything seem so simple but when I get in the kitchen, its frustrating to change. I have to learn how to be comfortable with change I tell myself it good for me. Today i’m trying tofu for the first time I have an air fryer. I’ve never been a fan of tofu because of the soft texture it has in most restaurants. I wonder if I’d like it if I made it myself and made it really firm. Because I like how it absorbs flavor from the other things in a dish. I just wish it wasn’t so gummy. I’m not vegetarian though. Couldn’t be if I wanted to. Need more red meat and iron than supplements alone can supply. Gotta love being incredibly anemic because of raging endometriosis that doctors don’t take seriously lol. Losing a pint of blood out of my small, 8-9 pint body multiple times a month is greeeeeat. That being said, I’d still like to try some firm tofu.
Have you tried fried tofu before? Tastes great. We like to dip it into fish sauce but that might be a little too foreign to you, so you could try it with smth else. Also you don't have to be vegetarian in order to enjoy tofu - it's consumed all over east asia and you hardly find vegetarians or vegans there
@@monimon9 yes I have tried it before. Like I said, I disliked it when I tried it because of the texture. It had nothing to do with the taste. Also, I have no clue where you got the idea of fish sauce being foreign. It’s been fairly universal for decades. My family has always had it in most meals both for its taste and bone/joint benefits. I never said you had to be vegetarian or vegan to eat tofu. I just mentioned it because I didn’t want people to assume it or assume I just didn’t like tofu because it’s frequently seen as an alternative option to meat.

you can also make it from milk ... basically in India what we do is put 2 to3 drops of lemon in warm water and just strain it use a cloth and then you have your indian version of tofu which here is popular as paneer ..
Very interesting, the process is pretty much identical to cheese but you start with animal milk first and usually use rennet. Does that make tofu bean cheese?
well, apart from the time milk cheese spends ageing, i's say it is! if you leave tofu out as long as cheese, the stuff becomes slimy and stinks like hell. happened to me once, never again.

You should check out Mary's Test Kitchen. She's made a lot of types of tofu recently, and I think it's on a playlist.
The soybean pulp can also be eaten and is called okara! As a few examples, it can be made into patties, added to stews, or used in some baked goods.
It's great if you ferment it for a few weeks
Or just feed it to the cows and get real milk.

That… seems like way easier than I ever thought. I’m going to try tofu when i get a chance and if I like it, I’ll definitely be doing this!
I recommend making sure using good seasoning and cooking it well, tofu is very plain on its own

It's basically the same process (as far as I know), but you don't use nigari, but calcium sulphate (E516)

I have been eating tofu for around 50 years. At almost 70 I srem to be doing fine. The reason I'm watching this is because the media says that store bought tofu is high in micro-plastics.☹️ The nearest health food store where I could buy it fresh in water is 50 miles away. Not sure I have the patience for this-might give it a try.
I've enjoyed experimenting with tofu dishes and grown to like it. It is way heaper protein source than meat is, which really helps with budgeting. I've heard fresh tofu is next level though and would like to try it some day.

We make it similarly in northern Nigeria but the different is the coagulant we add something different instead of nigari , we add fermented millet water, we call tofu(Awara) , after making the soy milk we add it to the fire if it’s start to foam we use a spatula to bring the foam down after 40 mins to 1 hour of cooking we add the fermented millet water to it and it coagulates we strain it with a muslin cloth and press with a stone and then is ready 😊

When I first say the recipe for tofu I realized that it's more similar In the process to mozzarella then I thought 😅 but for some reason it's easier to buy silken tofu here then soy beans, and there's only one physical store I know about that sells it, being a drugstore

I got a very “saturated” funky flavor by the time I made it to the soy milk / after filtration. Mind you, I was just trying to get rid of the 5 some odd pounds beans I had lying around so I think my water to bean ratio was off because I was making so much.
But, TO THOSE WHO ARE GOING TO MAKE THIS: I reccomend going very low and slow with the boiling part of the recipe. I think my mistake was rushing it and burning the bits on the bottom. Also keep in mind (as she mentions on her site) this shtuff really doesnt come off the bottom of the pot easily 😂 so keep it moving pretty constantly.
I made my own nigari from boiling sea water and the last water left from salt making is the nigari. It tastes sharp and bitter on your tongue. STPP will give you smoother texture tofu. But nigari will last forever.

@@jayb.1124 Nigari is coagulant used by the Japanese to make tofu, like rennet to make cheese from milk. I made it by boiling 5 liters clean sea water. When the water is reduced and salt crystal formed, drain the salt. I got a cup of nigari and a cup of sea salt. Keep the water in a glass bottle and use it to make tofu. It won't go bad, just like salt. You can keep it forever.
This inspired me to see if I could make tofu without soy and yes! Red lentil, chickpea and even split pea are all used in different regions.

The thing is, since when has tofu been an item in vegan and vegetarian diets from the perspective of western cultures? It has nothing to do with cheese nor is it a substitute for it and neither is soy milk for regular milk, they just happen to contain a lot of nutrients similar to each other while from different origins. Tofu is just tofu, not really needed to compare it to anything else and no need for debate or hate.

Like I understand that in western countries a lot of non vegan/vegetarian people don’t eat tofu and think of it as a substitute for meat (I think?), but it still feels weird to me (a Japanese person).

The soy pulp can be used, too! It's called 'okara' in Japan and it's widely regarded as a healthy food.
I might not be a tofu fan, but this was very educational for me. I absolutely never realised tofu is basically the “cottage cheese” of soy beans.

In Northern Nigeria, we call this awara. It’s sold as is(we say it’s boiled) or fried with a side of yagi and maybe grated cabbages,onions and tomatoes. Some with put spring onions or fresh scotch bonnets (or whatever hot peppers are available) in them before molding. One of our most popular street foods.

I'm Nigerian but I've never heard of awara before (well it's to be expected since I live in the south), I only know of moi-moi, which makes me wonder if awara is same as moi-moi. Anyways when I've made enough money for myself I'd love to tour all round the country and experience all the different cultures in different states.. btw what state is it that the awara sold?
@@nickeni3050 Moi Moi is different from awara. Moi moi is blended beans with pepper, seasoning and oil steamed in a cup, banana leaves or nylon to give it a shape. Awara is soyabeans. Same process as above. But some fry it after cutting it into cubes or eat it like that. It’s quite popular in the North. Abuja, Taraba, Kaduna, Kano etc. The women selling akara and fried yam at night sell them as well.

I use the same mold. I used to use an immersion blender but after getting a Vitamix I've found the milk yield better and the okara finer in texture. I've used the okara to make bread but still working on the recipe.

I think they chose soy to hate on because plant based eaters use it often as a meat substitute. Many of them eat a lot of meat thinking it’ll make them more manly (others convinced it’s a very healthful diet).
Not a new phenomenon! Back in the late 70s (or maybe early 80s) a popular humorous book came out called Real Men Don’t Eat Quiche. So funny also to hear the author in an interview say many didn’t get the humor and would ask him all kinds of advice on other foods and ways of “real men.” For years politicians and talking heads would smear an opponent just by saying he eats quiche.

The problem is, it doesn’t even have to be an alternative. It’s just a staple ingredient in east asian countries. We throw both meat and tofu into our stews too. Tofu wasn’t created to be a meat substitute, it’s just used as one.

lemon juice works so i think lime juice would work as well. but it creates a more crumbly texture and will taste like lime
Another thing what you can do with the soy curd is make a Korean stew call 비지 찌개 (biji jjigae) which means soy curd stew which is delicious with a side of rice. It’s usually not vegan, but to make a vegan version, just use vegan kimchi, mushrooms, green onion, soy curd, sesame oil, and veggie stock. PLEASE DON’T SLEEP ON IT! It’s really good and it’s not wasteful

I always make tofu at home but the filter it before boiling the milk and pro tip don't boil the milk just heat it to high temperature and then make curd by adding vinegar or lime juice and when cooled wash it with cold water then press it this will give very smooth and creamy tasting tofu. Don't boil the soy milk. The foam is nothing but soy oil.

You can try paneer(cottage cheese) which is made from dairy milk, has a texture similar to tofu and even the uses are similar.

I definitely definitely wanna try everything that you cook, you make everything seem so simple but when I get in the kitchen, its frustrating to change. I have to learn how to be comfortable with change I tell myself it good for me. Today i’m trying tofu for the first time I have an air fryer. I’ve never been a fan of tofu because of the soft texture it has in most restaurants. I wonder if I’d like it if I made it myself and made it really firm. Because I like how it absorbs flavor from the other things in a dish. I just wish it wasn’t so gummy.
I’m not vegetarian though. Couldn’t be if I wanted to. Need more red meat and iron than supplements alone can supply. Gotta love being incredibly anemic because of raging endometriosis that doctors don’t take seriously lol. Losing a pint of blood out of my small, 8-9 pint body multiple times a month is greeeeeat. That being said, I’d still like to try some firm tofu.
Have you tried fried tofu before? Tastes great. We like to dip it into fish sauce but that might be a little too foreign to you, so you could try it with smth else. Also you don't have to be vegetarian in order to enjoy tofu - it's consumed all over east asia and you hardly find vegetarians or vegans there

Also, I have no clue where you got the idea of fish sauce being foreign. It’s been fairly universal for decades. My family has always had it in most meals both for its taste and bone/joint benefits.

you can also make it from milk ... basically in India what we do is put 2 to3 drops of lemon in warm water and just strain it use a cloth and then you have your indian version of tofu which here is popular as paneer ..

well, apart from the time milk cheese spends ageing, i's say it is! if you leave tofu out as long as cheese, the stuff becomes slimy and stinks like hell. happened to me once, never again.
