For some reason it seems like everyone does. Me and all my friends at work seem to visit videos like this often in our spare time. I've always wonder why I and others are so fascinated by this sound.
Really depends on the setup, some applications don't require a lot of torque to run but require a lot of torque to build up momentum, takes a lot of power to spin up things than to keep them at a constant speed. Sometimes the motor can't handle a fast start, sometimes the mechanics can't handle it, sometimes the power supply can't handle it. Starting motors uses power at a really poor power factor that can cause issues with other equipment and be expensive.
You can hear the loud 360Hz harmonic as the motor speeds up. Trust me, I've been to theme parks and know what the chain lift motors sound like (Usually the big B&Ms)
I think that soft start is pretty reasonable, they do that with the bigger motors to minimize stress. I'd love to hear that motor hard start… note that I'm blind, and that I'm guessing The motor size by the sound. To me, it sounds pretty big.:-)

We use these for our wet scrubbers at our sewer plant
Bathroom in my workplace will require even larger motor for outflow vent.
