Loved this video. Since you love macaroni and cheese so much, you should try Haitian macaroni and cheese. It's almost the same concept, but we add ground beef.

I like adding a little bit of salad cream to my cheese sauce, sounds weird I kno lol but it adds a tang and some sweetness, I guess similar to your mustard and sugar

You do everything so backwards to me, like orderwise, but I thinks its a Caribbean thing tho. We do all these variations but never kale, not typically get Caribbeanpeople eat . Instead of kale we would use spinach and all the different types of sweet peppers in amacaroni pie. When I say backwards I mean the order of your way of doing it. We would fry the onions and sometimes the spices in all the butter, adding in that tablespoon of flour n salt for the rue. That brings out the flavor three times better, THEN we add the milk, cream, cheese into the onion/spice rue. With the sausage, we would again fry the sausage, cut it up small like you did, but fry it with all the spices, the butter accentuates all the spices and brings out the taste of the sausage. Then we would mix the rue and cheese sauce with all that spiced oil and sausage instead of frying separately and adding it later. Try out frying your spices and herbs in the butter, it brings out the flavors in a whole new way! But you have to be careful not to burn them tho!

Honey... I'm not sure if you actually watched the video because one of the recipes I fry the spices in the butter (which is what i do sometimes). Nevertheless, these recipes offer something different and mac n cheese is not a one way thing as everyone has the freedom to do as they wish. Thanks nevertheless.

+Kezia Eniang Um yeah I watched the video lolol. When I said fry the spices in the butter, I meant before you added in the flour, you add in the spices after the flour in all 3 ways as far as I saw. I simply suggested it because u seem to like spicy foods, and that brings it out in a new way. I was never implying that your way was inferior or anything, just something new to try. You seem a little offended I guess, so I apologize if my comment was mistaken as insult. When I said backwards I meant that as literally as possible, like you end, where I would start, that's all. Imagine someone making fufu by first grating raw platain and cassava and then steaming it versus boiling them and then mashing... It would just seem totally foreign and backwards because youre accustomed to one way. Nonetheless both are still fufu and delicious.
