Onam Recipes - • Onam Sadya Recipes /ഓണ...
Ingredients
Nentra Kaya -2 kg
Turmeric powder-1tbsp
Salt -2 tbsp
Water -1/2 cup
Oil - for frying
Method
Take raw banana. Take banana which is dark pinkish in colour. Take a bowl of water add some turmeric, salt. Mix well. Remove the skin of the raw banana (shown @ 2:11 mins). Now put it in the turmeric water for 15 mins. Take a steel wool/ chakkari and rub it on the raw banana. This will scrape the sticky part of the raw banana. Wipe all the raw bananas. Take a big kadai and add coconut oil. The oil should be really hot when you add the banana slices. With a slicer we need to slice the banana. Even with a knife we can slice it with a small thickness. Take a small bowl add water and add 2 tbsp salt to it . mix it well. When the oil is pipping hot add the sliced banana into the oil. Remove one and see if it is crispy. On high flame add 1 tbsp of salt water into the oil. Remove from the fire and keep it on the kitchen tissue.
TIP- always fry the banana chipsin a deep bottom pan.
Store it in a closed container.

On a few rare ocassions i hv actually stood and watched in awe across shop fronts this slick slicing of the chips into jumbo vessels sizzling with oil..but not the preoaration towards it ! The skining.. the bathing in saffron water..n hello..the steelwool scrubbing (boiii. Id hv neverrrr thought of tht !! ).. and the perfect test cuts..! The sheer gamut of nuances tht goes behind the scenes including the final saline dousing..wow ! It's so easy to chomp away at these n all other food bits that's bought to the table.. but honestly next time I get to any of these..I'd not only have a better understanding on hw these come about...but also a greater appreciation for the hands that bring it ! It's my only learning at VCW n and I'm much grateful to you VJ for this ! Season's Best to you VJ/JJ n to all bk at home too ! ( Best of the Day as well..you look all resplendent !)
