    so glad you did this. i made the babish ones twice and they've made me seriously reconsider what my definition of chewy is...glad to know i'm not crazy

      No, you're not crazy! I found Babish's brownie to be much more cakey than chewy - I don't know that the bread flour had the desired effect... but still love Babish! Thanks for watching, Harry.

    Glad I'm not the only one that had issues with the Babish recipe being cakey. I thought I messed up and tried the recipe 2 more times, mixing more each time to try and build up more gluten to make them chewier but they all ended up cakey. I've since switched to Stella Parks recipe and it's basically my ideal with only two slight modifications for my taste.

      @@ckbakes I upped the salt to 8g from 4g, but I like brownies a bit saltier than most. Also replaced .5 oz of the dutch process cocoa powder for the same amount black cocoa powder to give it a bit of a deeper almost oreo flavor. Again, mainly just for personal preference. The base recipe is really good too.
      It should be the "Glossy Fudge Brownies Recipe" on Serious Eats.

    Using the O.W.L.s examination grades for your bakes is brilliant! A lot of rating systems leave you wondering whether a 3/5 stars or 4/10 score equates to something being liked or disliked, but by using a pass or fail grading system, at least you know for sure whether a recipe is outstanding, exceeds expectations, acceptable, poor, dreadful, or (my personal favourite) troll. To my knowledge, no character has ever received a T as you basically have to purposely fail an exam to achieve worse than dreadful...

      @@ckbakes It's shocking how relatable that experience is. There has been many a time where I've come across recipe books ripe with seemingly delicious, moist cakes and muffins only to find them bland and dry. One that comes to mind was a Carrot Cake with Tuscan Spices (cinnamon, nutmeg, ginger, cloves,) and a Streusel topping... The cake was thoroughly underwhelming. Plus, no cream cheese icing? Scandalous! Not quite a T but definitely deserving of a D.

      @@Arkanaax Yes - that's been my experience as well! I also started grading, and writing down the grades in my cookbooks, because it was an easy shorthand for me later to remember how much I liked a recipe and if I wanted to bake it again.

    Oh, for Babish's recipe, you used too much flour. Looking at the recipe on his website, you actually had to use 1.5 cups of bread flour...

    Sry i have to say it, but this is not a good comparison between the two recipes.
    At first:
    Babish made 3 different recipes and you don't say which it is. (It's the third btw)
    Second:
    Babish specially said the baking time pretends on the liking and he baked it short for a melty brownie and you baked obviously longer.
    Third:
    If you want the really good and chewy Brownie from Babish you should try his second recipe.
    That is the real Gamechanger.

    I still enjoy your videos, but I really prefer the old format. You’re pretty entertaining to watch, and the new format doesn’t highlight that. Ok here’s the complement. I watch all of your baking videos even though I’m a carnivore and will therefore never use any of the recipes.

    mabye just dont overcook them next time,
    I did babish's recipe, cooked for 30 minutes (like he said), and them where the chewiest brownies ive ever had

      Hey Charles - I like your theory. In his video Babish says you can cook them for 25 - 35 minutes so maybe a shorter bake would have made for a more delicious brownie. I'll try that next time. Thanks for watching.
