I remember having squash fritters once at the Home of Grace when I was in nursing school . The patients made them but they rolled the fritters in crushed cornflakes then fried them they were so good. Thanks for you recipe I will try to make them.God bless.
I got tickked when you thought the fritters were too brown and said "but, they'll be good.". When my very Southern grandmother did something while cooking that didn't turn out quite like she planned she would say "Oh Dear Jesus, will you just look at that! Well, we'll eat it and be glad we've got it!! " 😀
My favorite way to eat squash is dragged in cornmeal and fry the slices. It gets so tiring sometimes to stand over the pan and turn each slice of squash. I’m wondering if I add cornmeal instead of flour, or maybe some combination of both, will the fritters taste more similar to squash slices covered in cornmeal and fried? Or any other way to shorten frying sliced squash?
Now, you've made me hungry!! I love potato cakes, too. A story about my first time making potato cakes... For some reason, I was staying home while Mother and Daddy went to Wednesday Prayer service. I wanted potato cakes. As they were leaving, Daddy told me to put an egg and a little bit of flour in my mashed potatoes. To this just-learning-to-cook kid, a "little" flour meant like a quarter cup. Well, my potato cakes were like glue! 🤨😮 Not good. 😊 Married now for 50 years, my potato cakes are much improved. lol We like them with sour cream and applesauce like for latkes. Thanks for sharing this great way to use all that squash.

I take left over mashed potatoes, and mix it with some canned salmon, just as you did the squash fritters. And fry them up the same way. They’re really good!
O my goodness they look so good i wish they would make cell phones that you scratch and sniff when looking at yummy homemade food being prepared . They look so delicious my grandma use to make them on Sunday for dinner especially when squash was in season .

I made the chocolate cobbler the other day and it is delicious. I have made the macaroni and cheese it is delicious one of the best I have ever tasted it’s so smooth and cheesy. My favorite way to eat squash is dragged in cornmeal and fry the slices. It gets so tiring sometimes to stand over the pan and turn each slice of squash. I’m wondering if I add cornmeal instead of flour, or maybe some combination of both, will the fritters taste more similar to squash slices covered in cornmeal and fried? Or any other way to shorten frying sliced squash?
Try slicing the squash lengthwise instead. I do that with fried zucchini. Still tastes as good & less work.
My son has a small bladder and he hit every bathroom in every place we ever went! 😂
