Chef's Special - Tuna with cream cheese

  • The recipe from the chef of the Gratzi restaurant at the Marriott Tverskaya Hotel, which you can repeat at home in your kitchen!
    For cooking, you will need the following ingredients:
    Tuna fillet
    Cream cheese
    Tangerine zest
    Soy sauce
    Teriyaki sauce
    Sesame oil
    "Curly lettuce" (e.g. frisse)
    Parsley
    Chicken broth
    Salt&pepper
    Thin rye breads (the thinner the better)
    Cooking process:
    1. Let's start with a “pillow” for our dish
    Mix large amount of parsley with chicken broth in blender and instantly tightened with a thickener. Let it cool
    2. Cooking tuna:
    The tuna fillet is being beaten off.
    Soft cheese is mixed with sesame oil, soy sauce, tangerine zest and laid out in the center of tuna
    The perfect ball is formed
    3.Serving:
    In the center of the plate - through the form - lay out the "pillow", then put the "tuna ball" on it, decorate with green lettuce and rye bread.
