I bought my Nikon D700 to replace my Nikon F3 when it was time to leave film and go digital. I had dozens of Ai-s lenses and decades of experience shooting Nikons, so a full frame DSLR was the way to go.
I still have and use that D700, with 14-plus years and tens of thousands of shutter actuations and it performs like it is new... albeit with battle scars from much use.
Yes, like you said, the colors are amazing. It was hard for me to give up film, I knew it well and could "get-the-shot" with confidence, but the sensor in the D700 won me over very quickly. And 12mp are more that enough. I have huge prints from this camera that I'd be hard pressed to get with film. I loved my 30 year old F3, but never looked back after going with the D700. I also never looked forward, never gave the D800 class a look.
Today, my D700 has a Voightlander 40mm f/2 (new version that looks exactly like a nikkor) mounted and it is my go to for general photography when I have no particular goal. Hard to beat the combination for fun shooting.

Your journey with the Nikon D700 is impressive, especially how it's remained reliable over 14 years. It's interesting how you've paired it with the Voightlander 40mm lens for general photography.
Given your preference for Nikon cameras, have you considered the Nikon DF? It's one of my favorites, blending classic Nikon design with digital technology. You might find it intriguing, especially since you appreciate both film and digital photography. Here's a detailed review: Nikon DF Review: ua-cam.com/video/6DEC65xCcBE/v-deo.html Would love to hear your thoughts on it!

@@Kim_Alexander The Df was impressive when it came out, and if it was on the market when I bought the D700, I would have went that way since I came up on knobs and dials and had so many manual focus Nikkors.
The thing that dissuaded me from getting it as a second body was the price versus the construction. I played with it and compared to my D700, it felt a bit more fragile, sort of like the DX range from Nikon. Maybe my own prejudice, but I couldn't justify the cost since the D700 was so good.
On a whim, I looked at the Df on the used market a while back, and the used prices were just as expensive ass when new.... I missed my chance.

@@albertsmith9315 I totally understand your perspective on the Nikon Df. It's interesting to hear about your experience, especially in comparison with the D700. Speaking from my own experience, I can vouch for the Df's resilience and performance. My Df has surpassed over 500,000 shutter counts and has been through virtually every condition imaginable. It's truly an unbeatable image machine for me just as the D700. The classic design really resonates with my style of photography.
I agree that the price point is quite steep. In Sweden, mint condition Dfs go for around 1500 USD, which is indeed a significant investment. However, based on my experience with its durability and the quality of the images, I personally think it's worth it, especially if you appreciate the unique attributes of the Df
Speaking of Nikon cameras, I recently had a chance to handle the new ZF. It's certainly an intriguing piece of equipment, and I find myself quite drawn to it. However, I'm not completely sold on it yet. The real dilemma for me lies in the exceptional color production of the Df. The Df has this unique ability to produce amazing colors that I've grown to love and rely on in my photography. This makes it challenging to consider switching to the ZF

@@Kim_Alexander Yes, the Zf... Nikon was a bit late to the mirrorless party, but I like that they followed through with a classic model. It could be considered the mirrorless Df, but I could accept that more if they really went all in and skipped the video function and that screen hinging out to the side. I loved that when Nikon released the Df, they knew their target audience, and did not add video. I wish they did the same for the Zf.
I will let it be on the market for a year or so, get all the bugs worked out and get the firmware updates in place, then maybe get one with that 40mm Nikon lens.
