Hello, thanks!! Urad dal is also known as black lentil, you can find it in indian grocery store, for details google for it. You have to keep minimum 6-8 hours on warm place before cooking the idlis and dosa. It depends on whether too. If weather is cold, then keep in switched off oven for 12-15 hours or until it fermented as shown in the video. Hope it will help.
