May i ask a question? What's to stop me from heating up the sauce before adding it? Usually, I cook a lot, and adding the sauce at room temperature cools down what I'm cooking. It seems logical to warm it up in the microwave first.
Ingredients for chicken and mushroom stir fry
4 servings
Chicken 300g / 10.5oz
Mushroom 100g / 3.5oz
Ginger 2 tsp minced ginger
Garlic 2-3 cloves garlic
Spring Onions
Red chilli pepper
Marinade Ingredients
1 tbsp Soy sauce regular soy sauce or light soy
1 tbsp Cornstarch or potato starch
2 tsp Cooking oil vegetable or sunflower oil
1 tsp Brown sugar or white sugar
Sauce
Oyster sauce - 3 tbsp
Regular soy sauce - 1 tbsp
Sugar - 2 tsp
Water 2 tbsp
Cornstarch ½ tsp
Dark soy sauce 1 tsp
Onions

What is your favourite mushrooms to add in chicken stir fry? I used chestnut mushrooms ( said portobello in the video was a recorded error. 😅 )

If the wok is hot enough, the sauce gets heat up fast and evaporates very quickly. I like your idea of preheating the sauce too!
We were hoping you’d also mention how many minutes the chicken should be cooked for those who are not experts at timing their dishes cooked.
