It look so yummy! I rarely ever cook with fennel seeds, will consider introducing it to my spice shelf. Where did you get your grinder from pls? I see it isn't the traditional Ghanaian one.
That grinder is used all over Ghana, if u don't want to deal with the heavier earthenware grinder, and don't want to deal with it cracking or breaking so easily.

Hello Sis, i caught this yumminess early..❤ The process of mixing the aromatic and intensely flavored marinade was beautiful to watch.. Look at all the fresh stew ingredients roasted for maximum flavor. I love chicken skin too.. always my favorite part. I can imagine the aroma and really this is torture because i am just waiting for my Egusi and garri right now while i salivate over these delicious stew.

Hi Nanaaba, hope I find you well my beautiful lady 🥰 🙁 Unfortunately for me, I started making your beautiful Ghanaian Chicken Stew, but now I'm stuck!! I tried so hard to understand, but I couldn't figure out what SPICES AND HERBS we need to add to the Roast vegetable blend! I just couldn't! 😭 Right now, I have fried chicken sitting there, blended roast vegetables just sitting there and hot oil on the fire with chopped onions ready to go in with some tomatoes puree in the tube (that's all I had; which I will mix with a little italian passata) I could only imagine you mean Italian mixed herbs, which for the first time I do not have! 😫 But I can't figure out what SPICES you mean! Being West Indian, we have a Spice called MIXED SPICE which is used more for SWEET DISHES or Cake baking, so I know you can't have meant THAT kind of mixed spice! Or did you? 🤔😬 Do you see why I feel a little perplexed? It's a little confusing for me as opposed to 'homie' Africans. This time, I missed out due to lack of clarity for me, but could you include the name of the spices in the ingredients for me please, next time. Thank you for the beautiful recipe. The oil was skimmed off at the end. You need oil to fry this stew or it won’t taste as good.
