Susan FYI ..... if you stretch the Doug ... and fold it crisscross onto itself 6 times every 30 minutes while the dough is proofing ( 3 Hrs ) ... you wont believe how much fluffier this bread turns out in the end. Thanks again for taking the time to shows this wonderful recipe.

I made this tonight for a gift and it smells so amazing that I am making a second batch. I am going to try folding it in about 6 times every 45 minutes to see if it comes out lighter. The denser bread is preferred by the recipient of the first batch. I used fresh grated asiago cheese instead of the processed powdered parmesan. My house smells amazing. Thank you for this recipe. Update: The bread did not rise at all, there is nothing feeding the yeast. Yes my yeast is fine as I baked other breads with my instant yeast. The taste is amazing though and I will add one teaspoon sugar or honey next time.
I just made your bread .....wow so simple and good .... only one question .... is it possible to make it a bit lighter ? by that i mean perhaps a bit more big bubbles inside and fluffier ?. ( good job btw I
Yes it is a heavy bread lol. I’m not sure how to change that up to o make it more “airy”. It’s so good if you slice it and add butter then toast it to have with other dishes. 😍. Thank you for letting me know you made it! ❤️🙏🏻
