No idea how it compares to snow or blue crab but the soft shell crab they serve at Thai places is fucking amazing
All soft shell means is the crab just molted, can be any type of crab. In most Atlantic coastal states it’s gonna be blue crab. But if it’s an Asian place they might be getting cheap overseas shit so who knows.

Crabs... some are fully aquatic and have gills. Some are semi aquatic having enclosed gills when on land and restore oxygen to the water in their gills through gurgling. some land crabs like the Christmas island red crab have almost a book lung structure. Hermit crabs and their ilk have a similar but far more fitted to land life. Their structure is so that their gills are breathing through soft tissue and exchanged through internal gills ALMOST like a pillbug.
