The lines are all changed at once, especially the forwards. So when a group heads to the bench it usually has to be done or you risk a too many men on the ice penalty. It's not like you can start a change and then change your mind because you see something from the other team. You'd have so many mixed up lines and penalties by the end of the game.

Yeah it's definitely risky but in theory if you didn't pull the goalie you would have no chance to win but if you do you have a higher chance to win and if you are going to lose anyway it doesn't matter if it's by one or two. They pull at around two minutes to simulate a penalty power play because their players have prepped for that. Essentially it becomes 6 on 5 for two minutes as a last ditch effort to tie and force OT. Very high risk high reward.
Nah 2 minutes is a good amount of time. Because of the offside rule, if the puck gets out of the zone all the players have to leave and come back in and regain possession. If the Stars are playing good defense it can take a good 15-20 seconds to regain possession. Not only that you have to then get some decent shot attempts

You’re right abt 2 minutes being plenty of time, but it also isn’t really lol. A “good” 2 minute, 5 on 4 power play will score around 28% of the time. Its even harder to score when its 6 on 5 so that percentage goes down. So that’s why they pull the goalie sooner, to try and elongate that time and drive up the percentage.
That being said their has been some discussion this series about the oilers coach making poor decisions about when to pull the goalie.
You can keep the puck if it goes out of play, they've got like hundreds of pucks on standby for that reason lol
Usually line changes are done when your team can push the puck to the other side regardless if you maintain possession but try not to ice the puck too. Usually it assignments but at time the coaches will call for the change.

It’s not interference unless he’s in the crease and prevents the goalie from making a play on the puck.
They pull the goalie as an "all in tactic." Pulling the goalie gives them an extra player on the ice. Its hugh risk high reward type thing. Full desperation mode. Gives them a man advantage.
