  • This lovely loaf has a crackling-crisp crust and a soft, chewy interior. I love it for dunking, toasting, and for just plain eating. Ingredients are listed below. To get the printable recipe, please visit my website here: bit.ly/31FRy0t
    Ingredients:
    1 pound potatoes (about 3 medium)
    3/4 cup (177ml) reserved potato cooking water
    2 1/4 teaspoons (7g) active dry yeast
    4 cups (480g) all-purpose or bread flour
    2 1/2 teaspoons kosher salt
    2 tablespoons vegetable oil
    Extra flour for dusting; 1 tablespoon cornmeal for sprinkling
    Baking temperature and time:
    450°F for 30 minutes with lid on
    400°F for 15 minutes with lid off

    Thank you for demonstrating your technique for making this rustic potato bread. It came out lovely and I am quite sure very tasty. 😉 I make all my family's baked goods including all the rolls, breads, buns and dessert goods. I have all my life. Please, don't apologize for your videos. You show your true self and we can see your heart is in what you do. I am also happy to see you using that "beehive" vintage Pyrex made for Westinghouse mixing bowl. I have a collection of several pieces and that is what I prefer to use in baking vs the modern versions. All my loaf pans I inherited from my mother along with a couple of pieces of milk glass bowls. The rest I have collected and folks have passed onto me which mostly came from older relatives who had passed on. Keep up the great work Kevin. It is delightful to see a man in the kitchen who enjoys what he does. ❤️🤗

    Discovered your channel a couple months ago, and yesterday I finally tried one of your recipes (this one to be accurate). It was absolutely delicious , even bought a Dutch oven just for that purpose 😅. Stand mixer is a bit too expensive for me right now so I knead the dough by hands, and I must say the result very much warranted the effort ;)
    Looking forward to try other recipes of yours, after I do that bread 2-3 other times of course :p

      @@kevinleejacobs1364 tho I got to say, I followed your quantities , but had a 10 1/4 Dutch oven . I was afraid it would be too big since you mentioned using a smaller one in your video , but at my total surprise, the bread filled most of it. Strange but worth noting in my opinion 🤷🏻‍♂️

    Wow, it looks delicious, I will try it for sure. I do sometimes dutch-oven breads and for the second raising step, I cut a round parchemin paper and let it raise on it, then I find it easier to grab that paper to put the dough in the hot dish.

    Kevin!!! You are so humble indeed! I am scared to death of messing up homemade bread but you make it look "doable"...even for Me! I am 67 years old and the only thing I have mastered in the winter time is Pralines and Divinity. I make them in cool weather for Christmas money! But you, sir...are extremely efficient and easy to understand and follow..THANK YOU!!!

    Kevin, I'm going to give this one a try as well. I use your recipe for English muffins all the time. I like the fact that you don't use fancy video equipment and you are down to earth. I also like to witness the "goofs" that happen to us all in a lot of your videos you share with us, LOL. Keep the videos coming, I like seeing real people sharing over the fancy-pants fancy videos, you tend to keep it real. No idea how I came across your channel, just surfing the web I guess but I'm grateful for your sharing and passion. I've told countless friends about your channel.     Bread is just a vessel for butter nice video at the same time your making the bread make some home made butter too simple easy and l love to drink all the buttermike too... thanks Alan

      @@barbarafallin2038 I make my own butter too and just love how sweet real butter milk is not that sour store bought crap , I thought everyone that made bread used there butter milk in there bread

    do not use plastic wrap. that is environmentally irresponsible. just use a moist kitchen towel and a plate to cover the bowl.

    Thank you so much Kevin. My Dad has a recipe he gave me for what he called "Hungarian potato bread" which has the potatoes as part of the recipe (along with caraway seeds) . You helped me fill in the blanks as far as cooking times etc. Will be making it for Thanksgiving despite living the keto lifestyle for over 3 years - (will do a fast after T-Day to get back on the wagon sort to speak). Your help itself deserves a new subscriber as far as I am concerned. Thanks again. God Bless:)

    I put a cookie sheet under my Dutch oven so that the bottom of my bread doesn't burn, especially if I and cheddar cheese in a recipe

    Aw! I believe you may get fed up with me in the end, for always having a chirp🤦‍♀️ Kevin, however when preparing for the làst rise set your dough on a piece of parchment paper which you just move over into the ready heated dough oven leaving the bread to cool directly on that parchment and is not so scary trying to remove having the parchment paper to hold onto for leaverage🇿🇦

    We use an electric knife to slice fresh warm bread. Great slices with no denting the surface of the bread.

    I loved your video, not at all awkward, just genuine. I am going to try this with a gluten free flour mixture. I cook with an Aga, so temperature and oven placement are often matters of guesswork, but I'm sure it will be delicious. Many thanks.

    Your bread looks great. I make sour dough bread every other day my kids love it.
    I use to put my dutch oven in the oven to heat but now I line my two and ahalf quart Dutch oven with parchment paper after the first rise i shape my bread put the bread in the pot and let it second rise for two hours set my oven on 495° put it in with the lid on for 30 minutes then take the lid off turn oven down to 450° and bake additional 15 to 18 minutes. Turns out great every time and the best part is I just lift it out by the parchment paper. My sour dough starter is two years old.. I'm going to try your recipe.

    This is Devine Kevin problem is I do not possess a DUTCH oven 🤪wouldn't be able to lift the heavy bugga anyway. Any suggestion what I could alternatively use to bake this fabulous loaf in🤤🇿🇦

      Hi Heather - You could bake the bread in a boule (ball) shape on a regular baking sheet. For the best crust, however, you'd need to bake the loaf in a heavy bugga Dutch oven!

      Someone in the comments below was saying she puts a cookie sheet underneath the Dutch oven to help prevent the bottom of the bread from burning (especially when she adds in cheese). Also, see below comments about using parching paper...

    Try using parchment paper instead of the floured towel and put the dough, parchment and all, into the dutch oven. add lid with ends of the parchment hanging out. And into the oven.

    I was searching for a potatoe bread and found your channel. Thank you first for the recipe, it looks easy and tasty.
    I bake my own bread for a long time, because it is healthier and lot more tasty as a bread from the supermarket (and less cheaper too^^)Also I wanna strech my flour a little bit, i can't buy it anymore (because of the war...!) I will try your recipe right now, after finishing these comment^^
    I want to say thank you for the video and no, it isn't arkward. I think your video is in fact a very honest and real video^^ The only little thing i noticed is the little "crack-noise" once you stopped or paused your camera, but even this isn't arkward. You only show what it looks like, to cook or bake in your own kitchen, how it "really" looks like^^ All the highlighted - shiny- perfect - kitchen - situations i saw in many other videos are not a single bit realistic^^ But to wear a (how have you called it?) , a black cashmere pullover while spreading white flour all over the table, i laughed so hard about your comment and the irony^^ And that's it, what i like, if i watch real people^^ Do you believe in my kitchen it is different? Not really, every time something goes wrong, flour on the floor and all over my clothes, everytime something fall to the ground, but that is, how it goes and please don't think you are arkward or strange, only because your videos aren't perfect. Sometimes it is the imperfection, who made the difference (and in your case, the sympathy too^^)! I like your video and i will look for more, if i started cooking these 3 potatoes^^ I wish you a nice day and thank you for being "YOU"! :) Many greetings from germany^^

    Kevin I do not have a Dutch oven do you think that a Corning ware dish would work

      Hi Cathy - Unlike a Corning Ware baking dish, a Dutch oven (enameled cast-iron) will hold the high heat required for this rustic loaf. Another viewer baked this bread in a loaf pan, so maybe that is an option for you.

      You can bake it in a loaf pan, or just shaped on a cookie sheet. It won't get super crispy on the outside but it'll still be good.
