Engineering edukku. such as BTech in CS. that will give you strong background in IT. then you can do a short term (6 months or 1 year) in AI/ML etc. or if you find a good institute with AI specialization for BTech, that is better.

BTech in AI - will be similar to this i think. if the course structure is given, i will be able to comment. but the weightage will be the same.
programming will be part of this course. you will learn python and various frameworks during this course.

Do Btech CS or IT from NIT(CALICUT), IIT(PALAKKAD),CET (trivandrum)all nearby Government or Aided Engineering Collages are best. In the syllabus we have AI ,NLP,ML,DL in brief..Then you have to do Masters in CS or IT. Mtech in Artificial intelligence , Mtech in Robotics,Mtech in Image processing, Mtech in Computational Linguistics etc are some of the programs conducted by Kerala government Engineering Collages. For the admission to these Collages, some times you need to pass GATE exam (General Aptitude Test For Engineering ,after your btech)or you got admitted according to your Btech CGPA. But this is a long but a gradual process, there are lot of online and offline universities provides crash courses. No idea how does it worth

my suggestion is you do BTech CS first and later do a skill based course in AI. not sure kerala il AI syllabus is updated yet.
There is Mtech programs in these subjects. CET trivandrum provides you Mtech in Artificial Intelligence,ALand Mtech in Robotics. In GEC Palakkad there is Mtech in Computational Linguistics,and mtech in Robotics, mtech in Electrical Drives. Onward this year syllabus is updated.
