I couldn't imagine trying to objectively judge something as subjective as a food preference. I also couldn't imagine looking down on anyone or any style just because I personally might enjoy something else more. I just don't roll that way, personally. Good food is good food, and it's always a treat. I don't care who made it or what style it's in. Though I'm definitely also a fan of heat, so I prefer meals that make me sweat and need to blow my nose. Otherwise, it feels like something is missing.

You know if anyone's doing any style really well, it's gonna be great. :) I come from New England, the land of barbecue barbarians, but I've travelled much of the country learning all the barbie techniques I can along the way. :)
Then there's Gate's BBQ in KC, also a few in Memphis, but yeah for brisket it's Texas. And for a side, the potato salad from Bodacious BBQ in Longview, TX. Yes, it's that special and if you try it you'll agree.
I'm not deciding until I travel to all the bbq states to taste all the varieties. In one cross country trip we were trying to find some lunch in southern Illinois and we passed this crowded bbq joint but decided to keep going. I always regret that.
Being a Certified BBQ, I have eaten from all over the spectrum. White sauce on chicken in Alabama, vinegar sauce in Eastern NC, tomato based sauce in Western NC, sweet spicy on pork in Tennessee, mustard based sauce in SC, sweet Kansas City style and minimal sauce in Texas. True BBQ, actually needs no sauce if properly prepared. Avoid chain restaurants, look for stacked wood, smoke, aroma, cars and pickups, a gravel or dirt parking lot and folks leaving with huge smiles. Competition BBQ is a whole ‘nother matter. It is always better, more succulent and more flavorful. I’ve been to four contests in the past month and probably consumed more exceptional meat than most people will experience in a lifetime. Several joints also compete on the circuit, find those, they’re going to be good. Find what you like and stick with it. It’s easy to become a BBQ Snob, try it, you’ll love it. Eat well my friends.

Let's face it, all BBQ meat is damn good if it wasn't rushed and got plenty of smoke. Most BBQ sauces(or rubs) are also great as long they stay pretty simple. My personal favorite is hickory smoked pulled pork with sweet/tangy sauce. Love Y'all, The Old Hippiebilly

West NC BBQ Sauce 1 1/2 cups apple cider vinegar 15 tbsp. ketchup (~ 1 cup) 1/2 tsp. cayenne pepper 1 tbsp. red pepper flakes 1 tbsp. white sugar 1/2 cup water 1 tbsp. brown sugar. Bring to simmer until sugar melts. Let sit for several hours.

I fully believe that if Alabama would quit trying to be the third Carolina and just fully embrace smoked chicken already, we would be serious contenders in the Great Southern Barbecue Rivalry. A good smoked chicken with Alabama white sauce can stand up to any Memphis ribs, Texas brisket, or Carolina pulled pork, and I'll stand on Aaron Franklin's coffee table and say that.
BBQ is an art that is beautiful in all of its forms. The way the vinegar balances and cuts through the fat in NC pulled pork is good. But I’ve got to say, the deep smokiness of KC, Memphis, and Texas BBQ put them on another level. As much as I love KC style, Texas has an edge simply for its brisket. A perfectly done, smoky, melt in your mouth brisket has no match. It touches a very deep place in your soul. No sauce needed. True BBQ should stand on its own.
Texas BBQ....hands down. Nothing beats a proper Texas brisket sandwich...meat and bread and NOTHING else....no need for sauce 'cause the meat speaks for itself. Pork ain't BBQ, IMO.
Ain't no debate: dry rub allows for full flavor. NC-Q feels greasy like it wants to slide down my throat. Only had it once and I still feel it sliding down 🤢
I mean both those guys are out in LA, so....🤷♀️. If the chairs in the place ain't covered in cracked vinyl and the pit master ain't north of 250 pounds with a belly and more burn scars on his arms than a firefighter, then I question the quality of the meat. And ol' boy "representing" TX style really isn't one to be talking smack about not being able to understand a thick Carolina accent. And if you doing TX bbq right, your sides are pickles, raw onion, and maybe potato salad. I guess some slaw wouldn't be amiss either. But mac-n-cheese? Simmer down now. Honestly, though for brisket I'm going East Texas (it's differnt out in the piney woods) and for pork I'm going South Carolina or Memphis (gotta have some sauce).
Pork is great but it’s easy. That’s like BBQ with training wheels, you almost have to try to do it wrong. Beef takes way more skill and patience, a good beef rib is the best BBQ ever but it’s also harder to find than good pork.
I’m a Floridian who should know nothing about proper bbq. However, I went to App State so I have me a preference for western style nc bbq. So I disagree with the whole video
