I would LOVE to work in a place like this. I work at a Subway in Australia and there is so much plastic. We have to use plastic gloves, swapping them between prepping food and customers. I can't imagine how much plastic I alone use at that job. Transitioning to zero waste at home, being more aware of plastic makes work seem more ridiculous. I hope to see more places like this :)

Doesn't melting down plastic ie plastic bags, release harmful fumes? I can't imagine this would be very eco friendly. Wouldn't using wooden offcuts to make plates be better? Because they're definitely bio degradable and would fit the atmosphere of the restaurant a lot better compared to tie dye looking plates.

I don't know if you will agree but this is how I see it. The point of opting a zero waste lifestyle is to reduce the waste that we are creating in our Daily life. And it is done with the idea of reducing the pollution caused by Plastic and other packaging world-wide. But, this is only a PRECAUTION. And that is not enough. what about the waste that is already there? we also have to manage that, and getting something Re-usable made out of a thing that is a total waste (like plastic bags) seems like a brilliant idea to me. Had they not converted these wasteful and polluting Plastic Bags into Re-usable Plates what would have happened to that Plastic? Yes, the recycling must have taken resources but we have to do something with the already existing Waste and this seems like a CURE. we are so deep in the garbage now, that doing one thing is not enough.
There is a technology to filter the pollution. Try to search "Ethiopia turns waste to energy" on UA-cam. They turned trash into electricity, filter out the clean water from the trash, and build bricks from the ash waste. I think they also have similar facilities outside of Tel Aviv, and in Scandinavian countries. Amazing stuff. Made me aware that it is possible to manage waste IF we (and the government) are willing to allocate some of our tax money for it, because the technology is already there.
I don't understand a zero waste restaurant not being a vegan one, I thought the point of zero waste was to be Eco friendly but using animal products in the restaurant really negates the the environmental offset of zero waste? like ok you don't use plastic and u reuse the milk for cheese but the process of getting the milk has a much bigger environmental impact. I really struggle to understand zero waste lifestyle when people aren't also Vegan.
