Thank you so much for this process. We raise Silver Fox rabbits and we can the meat in broth but generally used the inst-pot to cook the cut up buns 3 at a time as prep. I just harvest 5 roosters and used your process in our Nesco. OMG it worked wonderfully and the broth turned out incredibly. Pressure canning it all today.
My Grandmother loved fried Rabbit. She wouldn't touch Fish, Deer, Squirrel, or other types of Meat. She said "Rabbit sets good on my stomach." She grew Rabbits for many years. Thanx for sharing, God bless.😃
When prepared properly it is very tasty. We raise rabbits for food and explain to the kiddo’s that we will give them (rabbits) the best life possible and in the end those rabbits have a purpose. At first there was some issues with the idea of rabbit. With inflation it’s a good addition to our food supply.
In 1944 one of my older sisters married. And all household matters in clued in culinary arts she was well trained by our mother, who was also a fantastic but frugal cook. (it was WWll time) Sis’s mother-in-law, a 1st Gen Croatian woman- showed her a thing or two about frugality that even our mother didn’t use: Include onion skins & trimmings (minus roots) in a broth pot! Sis thought it so wonderful that she could teach her own mom ‘something new’. A favorite family story that has been passed down to my 8 sisters & 4 brothers

Years ago, when I was a kid, one of our neibors had meat rabbits, I have never tried it, as far as I know....my mother could have cooked it and never told us, lol
I don't know how you manage to stay clean! Every time I try to make broth or can, I get spots and stains all over my clothes. LOL. The best tip was putting a spoon through the opening of the colander, who would've thought something so simple could be so useful.

Hi Sarah, when dipping or pouring liquid’s from one vessel to another always put your ‘from’ vessel on the right and your ‘to’ vessel on the left, touching if possible. As you pour, any drips or runoff will go back in the original vessel and saves a lot of cleanup. This works for any job from straining broths to filling jars with any liquid, even jam/jelly. When I add liquid to jars I just line up the jars and slide them up to the edge of the pot. All the dribbling over the counter, gone! (Of course if you are left handed switch sides !) also, after years of tying my strainer to the handle of the pot I saw your spoon in the loop trick and I just love it!❤
Domestic rabbits have white meat similar to chicken. Wild rabbits, such as the cottontail, have dark meat. My family has eaten both with gusto. Great video.
I canned meat for the first time this week. It was both nerve wracking and exciting to have gotten the first batch done. I’m excited now to keep going! I love Rabbit. I can't get anyone in my family to eat it with me. The only thing I can get them to eat is deer. I eat all of the other meat, Squirrel, Bear, Bison, and Lamb. Thanks for posting this video. You are such a good teacher. 💛👏
We always lived out in the country. Mom and my oldest brother went hunting for rabbits to supplement our beans which were our main source of protein. They would sometimes bring home 2 rabbits, dress them and we would feast. Cottontail rabbits taste better than Jackrabbits and is more tender. Tame rabbits don't have the good taste of wild rabbits but I still like to eat rabbit when I can afford it. Thank you for sharing.

I've never thought to use my roaster for a big batch, I use it for everything else canning. lol I make my broth almost exactly like yours. My aunt used to use onion skins to color Easter eggs so you are so right on the color.

A couple of years ago I bought a Bay Laurel tree/bush. It's growing slowly. I love being able to go out there and pick bay leaves, dry them out and put them in a jar. I give them as gifts as well. You might do well to get one and plant it on your property. One less bulk item to purchase. 😁
I have a bay Laurel bush/tree that is 30 years old. I periodically cut a couple branches and just stick in my pantry as is and pick off what I need. I am also growing black peppercorns. They won’t produce for a year and need to come indoors during the winter but they will produce all year. Both would do well in your greenhouse.

I'm near Greenville, SC so the winters are not too bad. I have 2 avocado trees that are a about a year & a half, which I just brought back into the house. Hoping to plant them outdoors next Spring if they make it through another indoor winter.
Your rabbit cookbook is amazing!! Brought to life many more options for our rabbit meat. We debone them before canning to avoid all the little pieces hurting our teeth. Great video 👍
I remember eating rabbit once or twice when I was kid. It wasn't bad. Mom made a dressing from cream of mushroom soup. It does taste a lot like chicken. I always add vinegar to bone broth. I always appreciate your through instructions. I don't know anybody that has ever pressure canned rabbit meat. This is a first for me. Amazing how much you got out of those 4 rabbits.
My grandmother used to can wild rabbits in the 1930’s when my grandfather was out of work. That’s a lot of rabbits for a family of 8. She canned them in a hot water bath, not USDA approved, but that’s the way everyone canned in those days. Many people still do, but I would prefer pressure canning meat. You have to do what you have to do to survive. 💙

Thank you so much for your informative videos. We processed 11 rabbits this last weekend and after the 2 days of resting I cooked each one I the instant pot then removed all the bones used the kitchen aid mixer to shred the meatballs, we ended up with 3 gallons of shredded meat. Today I will be canning the meat into pint jars.
Hasenpfeffer was a staple in my granny’s kitchen. They lived in VERY rural Kentucky. I learned to love the tartness of the meat. She also used vinegar in the gravy😊

Since our canning harvest here in U.P. of Michigan mama hasnt spoke much of the Harvest Right machine so its gunna be a total surprise to her. I'm so excited. I finished her pantry and put some shelves in one spot that seem to stick out so I can un screw them quickly and put the machine in that spot for her. Already wired in a dedicated circuit. Wow. My mom used to use a similar pressure cooker for years when I was a kid. I worked with it like I knew what to do, back then. When I saw it still sitting in my late parents house recently, I was looking forward to some of those meals my mom would make in it. But that was well over 30 years ago and didn't have a clue how we used it. I did some research and found that they are very dangerous if you don't know the proper methods - especially with the old ones. I definitely do not remember my mom timing before putting the weight on or any of those calculations! I'm glad it went in the dumpster - it would have blew up if I had tried using it. ;-)

I find it would have been interesting to know the weight of the raw meet you have put in the roaster oven and the weight of cooked meat you got after deboning. Gives us an idea of how much meat we need for a batch of canning.
I loved your tip about putting a spoon holding up the strainer so it doesn't go into the large pot. You have such cleaver ways of doing things, I've always enjoyed your channel. I've never tasted Rabbit meat before. I used to have a couple for pets for my daughter when she was small.
I've never tried rabbit meat before nor do I know anyone that is raising rabbits but the broth recipe looks amazing and it would work well with making chicken broth!!
I enjoyed your video on pressure canning. I inherited my grandmother's pressure canner. Use to use it in the past, not recently. Mostly freeze meat now but glad to know how to can if needed to. We raised rabbits when I was a kid. My mom would cut them up and fry them like chicken - but ours were much younger and smaller, so they were very tender. I liked the fried livers. They were solid like beef liver, but sweet like chicken liver.

All root vegetables must be peeled and roots removed for safe canning per NCHFP. (National Center for Home Food Preservation). If you want to make broth or stock with peels or roots, they suggest freezing it or using immediately.
Thank you for putting this video out. This is exactly what I am needing to do to make space in my freezer, I just wasn't sure how to do it! I am very new to canning, so seeing this video helps to take the mystery out of it for me.

We freeze dry our extra broth. It makes usage amounts much more flexible

I save all my veg cutting (except brassicas-bitter flavor) freeze them and make veg stock/broth…delish and free

I enjoyed your video on pressure canning. I inherited my grandmother's pressure canner. Use to use it in the past, not recently. Mostly freeze meat now but glad to know how to can if needed to. I use to eat rabbit meat while in college. Worked for our school poultry lab and we had rabbits at times. It was good. Thanks. 😊💚💛🐸😎

We raised rabbits when I was a kid. My mom would cut them up and fry them like chicken - but ours were much younger and smaller, so they were very tender.
I liked the fried livers. They were solid like beef liver, but sweet like chicken liver.

All root vegetables must be peeled and roots removed for safe canning per NCHFP. (National Center for Home Food Preservation). If you want to make broth or stock with peels or roots, they suggest freezing it or using immediately.
Thank you for putting this video out. This is exactly what I am needing to do to make space in my freezer, I just wasn't sure how to do it! I am very new to canning, so seeing this video helps to take the mystery out of it for me.
