What is the minimum thickness that the leather needs to be? I need to roll out some train case trim, but it would be pretty thin.

For best result, we would recommend at least 4oz. (1.6mm) thickness. You can try thinner and see if you like how it looks.

What pressure should be set on to get that crisp finish look

It really depends on your leather thickness. You'll need to do a few trial to set you pressure on some scrap leather.
