I previously watched an English installation of a satellite dish. They used a U-shaped duct to cover the cable along the roof. I think that is a good idea. (1) Cable insulation will degrade with years in Ulta violet (2) We do have problems with cockatoos pecking at cables. Just ask Telecom. I would suggest a U-shaped duct glued and sealed to the roof would be a good addition to protect the cable as well as the end caps you have used.
You can manually lower the Dish and Arm by loosening the 2 side bolts with a large Allen Key. It might be wise to mark the location of the arm before loosening so when you are able to get power to the van again that the Dish and arm are locked back in the same location and then the unit can be closed through the head unit.

Random question ……. If my 12 volt system fails ,how can I manually lower the dish to roof so I can travel to get help?
