For the cheese cake French toast
Icing
1 block cream cheese (we used reduced fat) at room temperature
2 tsp vanilla
2 cups of icing sugar (or to taste)
Pinch on salt
3 whole eggs
1/2 cup heavy cream or milk of your choice
2 cups graham cracker crumbs
6 thick cut pieces of brioche bread or your bread of choice
For the coconut French toast
3 whole eggs
1/4 cup sugar
1 can coconut milk
Cream or milk to thin out if necessary
6 thick cut pieces of brioche bread or your bread of choice
2 cups toasted unsweetened coconut flakes
Vegan variation
Soak 2 tbsp of ground flax seed in 1 cup almond milk for 30 min and strain
Add mixture to 2 cups coconut cream
Use your choice of vegan bread
2 cups unsweetened coconut flakes

If you don’t like or can’t eat coconut then you can try almonds? Use almond milk instead. If it’s an allergy thing, the cheese cake one is super good too 😁
