What I heard is that composer Kawai invited 75+ Japanese folk singers (all female because min-you is usually sung by a female, never sung in chorus with a group of singers like this) across the nation and recorded for seven hours straight for this movie. Min-you requires very hard, decades-long practice & discipline to master. Many singers here are in middle-age & up. Min-you is one of the dying arts in Japan.

This question being for years old, it might not be useful, but this music is based on a type of bulgarian singing mixed with japanese scales (notes); the type of singing is bulgarian folk, the melodies japanese folk.

民謡だと、元ちとせもそうですね。
