    i am about to jump 2 feet in the BBQ sauce business using my dads down south homemade recipe that people always loved...and PA is a cottage law state.. so i dont need a commercial kitchen...its time to get busy.. thanks for the vid

    I am at the point of scaling up to a copacker for my bbq sauce. I'm currently making it at home but I can only do 10 jars at a time in my canning pot, it takes about 8 hours to do 50 jars. I live in a small town and there are no commercial kitchens within 2 hours of us. I have four outlets that will carry my bbq sauce but I can't get my FDA approval making it at home due to cottage laws. I have had excellent feedback from family, friends and customers at the little events I sell at. I don't believe I have a choice but to go with a copacker

      I thought that you didn’t need FDA approval unless you had meat in it. No?

      ​@nole8923 If you want to sell in stores you have to go through the FDA to get an approval for the recipe, UPC code and nutritional value label. Here where I live in Wisconsin I can't make sauce in my kitchen and sell to the public via farmer's markets and so on, it's against the cottage laws.

    Is your book specific to bbq sauce - meaning the types of ingredients involved? Im considering a venture involving a dip/baste/marinade that is not ketchup style based. Would your book still apply to the creation of this potential business and the initial steps i would need to take? Does it line out step by step in order of what to do before actually selling the product? How can i find out more about your consultation fees if i wanted to go that route just to acquire more knowledge?

      Hello thanks for asking yes this book is VERY detailed in the business aspects, I don't get to detailed about the ingredients aspect ONLY because the book focuses on business, permits, distribution, etc legal things and selling and packaging but the recipes I would assume the reader would have already , but everything else is in the book it has a LOAD of resources.

      well for cottage food laws from home all protein related foods cant be this would be a commercial kitchen item .

    My cottage food law here in Florida prohibits BBQ sauce, does this mean I can't make it from home and sell it? What options do I have or how can I sell it?

      yes this would be a commercial kitchen ...cant from home your right BUT to make this work use the kitchen to fill preexisting orders. Example say you get a store or retail location that wants some rent the kitchen to produce that amount but the trick is finding the balance between cost of renting and the order profit if you can START your bbq sauce business and sometimes the margins may be tight and small at least your up and running as you sell more your production costs go down make more margins !

      this would need a shelf life test they are a bit costly though but need to be done only once

    I have access to a commerical kitchen. All I need to do is make and bottle the sauce there and I'm not breaking any rules? (Cottage Law-Florida)

      hello well once you make it there you cant bring it home and sell it you would have to example: you have a grocery store that needs 100 bottles you make it there and deliver to the stores or ship it to them. I get many questions about making a food product in a commercial kitchen then bring it home and sell it online that is a no. Florida is pretty easy for cottage food laws but acidified foods , and sauces are a no

    Does California allow for sauces? I just watched your video on California cfo laws and it was unclear. You mentioned that condiments were allowed, like mustards and vinegars, but then mentioned foods like ketchup are not allowed.

      yes there are 3 items on the state website bbq sauce from home cant be made, BUT you can use commercial kitchens and then sell it I have a video that shows 14 alternatives to renting a kitchen !
