I've been watching your videos since the Barista series. I've enjoyed the funny ones like the "everclear coffee" video and the serious ones like this. Did you use salt with iodine or iodine free salt for the lactic fermentation?
This is a great question and i speak specifically about this in the video at the point we add the salt!
What is your process for low acid coffee ?
I don’t quite understand your question. What do you mean by low acid coffee?
