Thanks for taking the time to explain this. I suspect the thermostat on my oven is bad and your video helped me understand how they work and why they might fail. I also found your last comment very useful, to not blame the thermostat when you have an earth fault.
My old Defy is tripping breaker when thermostat knob is turned but indicator light is not coming on.Disconnected the element and no longer tripping breaker so element is suspect.Why are the indicator lights not coming on?thank you.

It’s probably bad if you really wanna know check if it’s getting power to the light
What if that wire breaks, do i have to throw the switch away??
Yep , Break the capillary and its charge escapes so it cannot regulate / control the on -off temp
