He is okay. Almost all Hotel Dosa Masters make thicker while pouring the liquid flour mix/Batter and then take away top layer of flour mix/Batter to make crisp. That wastage amounts 20-30%. He is clever to make use of the Batter effectively. The ugly part is dipping his hand on the Batter Vessel. I too lived in Vododara/Baroda in 1991-1992 and 1996-1998. I know one Hotel opp to Vadodara Railway station run by Malayali Family. I used to go there some times.

My son Tamilarasan says the same here in Chile. But he does not speak Tamil, only spanish ( english ), mother language. He loves dosas.

I don't know about the taste of this dosa. But I didn't like the way he made the dosa and other stuff. Main thing is that, he wasted almost 1/4th dosa at the pan edges. Overall I didn't like his dosa. He hasn't poured sufficient oil. Not looked good to see for my eyes.

Not really. Pure rava masala dosa does not have dusting or red chili powder, salt, etc. It is also not eaten with Sambar.

You are absolutely right. I have seen that while making paper dosa, to make it thin and crispy nearly 30% material is scratched and throw away, which can be fully utilised otherwise.

Oh my god...Ayyapa Dosa..15 years back when I was in Baroda...I used to visit his stall twice or thrice a week for dinner. That time his stall was in old Padra road. Now I am in Bangalore. I am very happy to see him after 15 years through youtube...!
