Stone, you should try putting your backstraps in a cooler of ice, drain water off everyother day and add ice. Five days and they look like porkchops and no gamey taste. Soaking in milk other night before cooking works too. God bless yall, keep up the good work.

I played golf every day when I was 15 years old. Threw my clubs in my golf bag and got on my 10 speed bike and rode 6 miles to Auburn Hills golf course. It was a 9 hole course and I spent all day until almost dark playing golf, loved it. Now I can't play because of my back.

There's a product called Umai Dry Age. Looks like a vacuum-seal bag, but it's actually a membrane that lets moisture out while keeping pathogens out at the same time. Wrap your large cuts of venison in that, vacuum seal it, put it on a cooling rack, put that rack on a tray, and put the whole shebang in the fridge for 30 days. Once that's done you take it out of the bag, trim it up, and it's ready to cook, freeze, or be made into jerky.
If you have a problem with the gamey taste in meat after you kill it, put it in a ice chest and leave it on ice for like four days until there’s little to no more blood in the water when you drain it. Me being from Texas the aging stuff just doesn’t happen unless leaving it in the freezer is aging lol

Interesting tidbit about Jep's experience with nearly drowning, and Phil being mad. I nearly drowned twice. Once when I was 11. To put it short, I got sucked into a culvert in a low-water bridge that crossed a river. I was fully submerged, and barely managed to hang on to the edge of the bridge with the tips of my fingers. Dad grabbed my arms and pulled real hard, but couldn't get me out on the first tug. He said he didn't think he'd be able to get me out and was afraid he'd rip me in half if he pulled harder. Then he pulled with all of his strength and finally got me out. Lol I bawled and was terrified, that I nearly drowned. As soon as he got me out, he gave me his very intimidating, intense, angry look, while balling his fists. Thankfully I didn't get whooped like Jep. But in that moment, I couldn't understand why he was intensely angry at me when I nearly drowned. But I now know he was angry because he was nearly scared to death because of me doing what I did that nearly caused me to drown. I remember him telling family members that he couldn't hardly sleep for a month because of that.
Venison shouldn't taste gamey if you cook it right. We've been hunting for years and have never had to age a deer, esp leave it hanging for weeks. That's crazy if you ask me. Normally it's just cut it up and freeze it. Cooking it is usually just salt pepper and butter, occasionally it'll get marinated esp the tenderloins and Backstraps. But if you cook it right it shouldn't taste gamey at all
