The kaassoufle you guys had was one that has aged cheese in it, its called a souflesse. The common kaassoufle that people pick up at the febo has a more mild cheese flavor. An amazing combo is to put a kaassoufle on a white bun and then top it off with peanut sauce!
The proper translation for 'oude' kaas is 'aged' or 'ripened', not 'old'. Old cheese is cheese that you bought 4 weeks ago and has been drying out in the refrigerator ever since.😏

The best "Berenklauw" for me is made from a good "gehaktbal" (meatball). Unfortunately you don't see them as much these days. Also there should be much more onion on it. Standard around here used to be 1 meatball & 1 (hard) onion for each stick. Most common "condiment" is either curry and mayo (actually "frietsaus") or "satesaus", but mustard is not uncommon either.
Berenklauw needs pindasaus and if you are lucky, they also put thick (5mm) Katenspek slices (deepfried along with the meatball and onion) next to the onion.
@@Elatenl berenklauw isn't necessarily factory made. it's a meatball cut in slices, and some quartered onion peels + preferrably some slices of katen spek & then deepfried. used to make them myself when i worked in a snackbar a couple decades ago. pretty sure that place still makes them that way.

(Not to mention the whole friet-patat debate). Just never came across anyone calling bittergarnituur "bruine fruitschaal"... Vlammetjes are so darn good, I don't get them often but they do hit the spot A berenklauw needs satesaus to be fully appreciated I also love a Broodje Warm Vlees (also with satesaus) from a snackbar
Ghoulash kroket, although it's interesting to note they taste very differently between places. Sometimes they're more sweet than spicy and sometimes the filling is more of a pudding. Other times it's filled with a lot of "meaty" pieces.
Depends on what you put in the ragout. I made my own, by putting some leftover homemade goulash in the ragout, forming and breading them. I had 16 of them and 10 bitterballen. They lasted 3 days. Normally 2 is plenty for me, but these were to good.
Fun fact: the Mexicano is actually a Dordrecht invention, made by De Vries Vleessnacks! Also, the first factory made frikandellen are from the same company. Local pride!
If you ever get the chance: Try the Vlampijp! The Vlampijp comes from the same manufacturer as the appreciated Vlammetjes. in fact it has the same ingredients too. It is like a very large Vlammetje. However, in balance there is a little more filling than wrapping(?) and the ends of the wrapping have a little breadcrumb dipping. This results in a snack a little less oily than the Vlammetje and imo a better, intenser taste. And it's BIG! The backdraw: It seems availability is very low. I never saw it outside a cafetaria and in the approx. 15 years it exists, i maybe saw it in three or four cafetaria's. That no one mentioned it before in the comments confirms for me it's pretty hard to find (unfortunately!)
You take that back!! The McChicken is one of the best chicken sandwiches out there. At least we agree that the mexicano is an S tier snack. Also, protip: usually getting bitterballen is more cost-effective than getting a kroket, because you get more of the same for a proportionally lower price.

I was watching the video again and there's still one thing i wanted to say. 😁 In the South we call the Berenklauw a Gehaktbal Special, because it's a meatball sliced in four with the onion in between, so no patties and you get it with frietsauce and curry on top, so it automatically becomes a Special! 😉✌🏼
The Picanto is my favorite with peanut (sate) sauce. As for the kroketten. The lightest is usually veal, goulash is more reddish, and the beef is the more brownish color... That being said, you should really try a "sate kroket" Lastly, the "patties" of the bear claw was a cut up meatball.

I will list some of the lesser know but in my opinion amazing snacks. - Viandel, its a frikandel but then dipped in some sort of breading/batter. - Sitostick, its turkey meat and onion on a skewer with batter around it. - Lucifer (dutch for matchstick and also the devil), it's a spicy kipcorn with a weird red batter on one end, the batter is okay but seems more like a gimmick. I just like the spicy chicken stuff. - Grizzly, its a berenklauw but then dipped in a spicy batter. I seem to like battered and spicy stuff :p - and last but not least Vlampijp. its a large vlammetje with breading on both ends and more shaped like a loempia. definitely a recommendation if you like vlammetjes. there are even way more lesser know snacks, like all the rolls (sate, shoarma, smul) and many more but the ones listed above seem to be the ones only dutch people actually know about and never get mentioned in these sort of videos, give em a try 👍
Fun fact, below the rivers, a lot of snackbars will make a frikandel speciaal with curry mayo, onions and peanut sauce. (and usually they'll have a sign that says that their "speciaal" has peanut sauce (satésaus/pindasaus) probably to warn those with an allergy to order it without the peanut sauce) I found a Bram Ladage near Bleiswijk last week. It's good eating, even there!
Oh... if you like broodje frikandel special, try a broodje Mexicano with data sauce (or mayo). Or do both and choose broodje Mexicano oorlog (mayo, sata and unions)
My favorite is the Viandel. If you love frikandel, you will probably like this too! It is a frikandel but has an extra layer around it which makes it crispy
Seriously, if there is anything I miss, it's probably Dutch snackbar food. As someone with celiac disease it is exceptionally hard to come by gluten-free variants, and then there is the situation of having to fry them yourself which can be difficult with the gluten-free variants as well.

You have to try this: ragouzi, sitostick with sate sauce, Grizzly with chilli sauce, worstenbroodje with sate sauce, Smulrol mayo, Shoarmarol. Those are my favorites, hopefully they will be yours too!
Your right! I always eat the special snacks such as sitostick, smulrol and grizzly at a snackbar. I hope they will try them as well. I eat those without sauce. That 's for me the best.
Kaas souffle, nasischijf and frikandel speciaal are my favorites but kroketten and broodje hamburger speciaal mét sla, ei, augurk, tomaat en komkommer are good too!
Bram Ladager is well known, I live in the Far East of the Netherlands (Enschede) and somehow I know that name from the Rotterdam area... Dude must have fried some good stuff in his days (I presume it's now run by his ancestors) I used to sometimes visit a football game in the Kuip and then eat some Bram snacks
A Pikanto used to be called a Gehaktstaaf, as a cilinder version of a Gehaktbal. The Gehaktbal is the meat they use for a Bereklauw...its just a deepfried and slightly spiced "meat"ball with onions. I did miss the Viandel, obviously the plain old Gehaktbal and the Sitostick. Viandel is chicken/beef mix with a crispy lumpia like outside and the Sitostick is a breaded chicken/turkey/onion shaslik. (You might have to head a bit further South to find them though) Oh and every single deepfried snack is good with mayo by the way, but a mild mustard is honestly a good second. My standard order here at Friture Pam Pam (kind of a local legend tbh) is a grote friet Zuurvlees, 2 Frikandellen and a Pikanto. :D
You guys could also try: Lihanboutje, Kikastick (or sitostick), broodje warmvlees with pindasaus, satekroket (prefferably on a white bun), hamkaassouffle. Thanks for your video's they are very fun to watch. 👌🏻
- "Berenhap" / "berenklauw" is a _meatball_ + white onion combi (deep fried, obviously) that mostly exists as an excuse for eating something with "pindasaus" *** - Nothing beats a frikandel speciaal, great favorite, same, but keep the bun 👍 - What i'm wondering is if you've tried "kapsalon"?? surely this must have come up already? *** = Pindasaus is essentially just a thick peanut butter sauce, sort-of comes from our history with Indonesia, it's also wrongly known as "satesaus" because we like it with "sate", which are skewers of meat that we also eat the same peanut sauce with. Technically we butchered the sauce & sate and they not longer really count as Indonesian food. Pindasaus is not meant to be made with peanut butter (like we do) & sate is supposed to be chicken & ham (but 95% of places that sell "sate" in NL just sell chicken skewers) but eh, even if its different i can still definitely recommend "sate met pindasaus" for a future video 🤷♂😉

In Belgium we have also very good snack bar food like Julientje (fries, satéspices, stoofvleessauce, mayonaise, dryed onions and slices viandel). My favorites are Lucifer, Loempidel and Ribster. But I like also Grizzly and Mammoet with Mammoetsauce
when my nut and milk allergy werent as bad my absolute favorite snack was the trio sate. Do need to say this is a ssnack you find in overijsel maybe drenthe or achterhoek but not in the west or extreme north for what i know. i know enough times i wanted to order it and the cafetaria owner never heard of it. cafetaria/patatboer zijn vervangende namen voor snackbar.
As mentioned before in the comments, the Berenklauw, or as we call them Berenhap, can not go without sateh-saus. Also good for you to know that not all specialsauce is with curry. In my region special is with ketchup in stead of curry. Next time, try if you can find a 'lihanboutje' (lee-hán bauwtje) somewhere. It is an old snackbar snack even I don't understand.
If you get the chance since not very establishment makes it. You should order a hawaii stick. Ist a picanto, cut up with pineapple in between on a stick. you should eat it with peanut sauce or sate saus as we call it. Also, the berenhap needs peanut sauce, also there is a battered berenhap which is slightly spicier. Over here, what you call bereklauw is a Spoetnik and it's eaten with curry sauce
Great video as always and the verbal and visual puns definitely deserve 5 stroopwafels! My favorite snacks by far are the kaassoufflé and the frikandel speciaal. I would not likely choose a snack because it is vegetarian, but that does not mean I would skip a nice bamischijf. I do think the right sauce can make a lot of difference. I would never order a berenklauw without peanut sauce for example. Or chicken nuggets without Smoked BBQ sauce. The sauce can really completerend a snack and push it closer towards those hard to earn 5 stroopwafels. I love bitterballen, they go very well with different sauces. Beers are mandatory though. The kroket does not do much for me, other than size matters. I mean, when I crave a broodje kroket (with mayonaise or mosterd), bitterballen won’t cut it. But when I really crave a vegetarian snack, I cut an avocado in half, remove the pit, don’t remove the skin add mozzarella, a slice of tomato and some salt and peper and pop it in the air fryer. And when they are done, I take a small spoon and scoop them out and enjoy… Looking forward to your next vid! Cheers, Rick

You guys should try the Eierbal. Best snack ever! Imagine a round kroket with -of course- ragoût, size tennisball, but with a boiled egg inside of it. Combined with a splash of mustard and you're in Heaven! ;-) Btw; although the eierbal gets more and more rural exposure, it's almost solely sold in Groningen (the provence) -because Groningers keep insisting it's invented there-, and in some parts of Friesland and Drenthe. And by some daredevils in the Randstad.
Favourite thing for me is: Mexicano (Mora Mexicano's they are called Carrero), Kaassouflé and a gehaktsstaaf (pikanto), I enjoy the gehaktstaaf (pikanto) more than a Frikandel, although BECKERS frikandellen are the GOAT (of the frikandellen you can get imo)

that Mexicano "meat" sounds like a McRib version of a "bullet" I had in Belgium - large meatball sausage item cut most of the way down into segments (like the English Christmas chocolate orange) then fried and the segments open up in a blooming onion fashion bite size for dipping

You really should go to a snackbar in Belgium sometime, they have even more snacks there, and lots more sauces to put on fries too. The only snack I eat regularly at home, and sometimes from a snackbar, is the frikadel. I don't like them when they are only from chicken meat, there has to be some other meat in there for the flavor. The original recipe was pork and horse, because that was really cheap meat when the snack was invented in the early fifties. Horse meat is really expensive today, it can cost up to 60 euros a kilogram (good beef is 25-30 euros per kg).
The culinary tradition of adding chopped raw onions to any food comes, in my opinion, from the Dutch raw herring, served with onions. Traditionally, ever since the Dutch Golden Age, refrigeration was not invented untill the 20th century so chopped raw onions were added to hide any bad odours or even bad taste.

I love the berenklauw, a meatball with caramelized onion. But I eat it covered in Saté saus.
I was watching the video again and there's still one thing i wanted to say. 😁
In the South we call the Berenklauw a Gehaktbal Special, because it's a meatball sliced in four with the onion in between, so no patties and you get it with frietsauce and curry on top, so it automatically becomes a Special! 😉✌🏼
The Picanto is my favorite with peanut (sate) sauce.
As for the kroketten. The lightest is usually veal, goulash is more reddish, and the beef is the more brownish color... That being said, you should really try a "sate kroket"
Lastly, the "patties" of the bear claw was a cut up meatball.
Oi, a 'Bereklauw' without peanutsauce? 😮 It supposed to be a meatball with onions btw. Best is to make one yourself. With the 'pindasaus'👍🏽🍻.

I will list some of the lesser know but in my opinion amazing snacks.
- Viandel, its a frikandel but then dipped in some sort of breading/batter.
- Sitostick, its turkey meat and onion on a skewer with batter around it.
- Lucifer (dutch for matchstick and also the devil), it's a spicy kipcorn with a weird red batter on one end, the batter is okay but seems more like a gimmick. I just like the spicy chicken stuff.
- Grizzly, its a berenklauw but then dipped in a spicy batter. I seem to like battered and spicy stuff :p
- and last but not least Vlampijp. its a large vlammetje with breading on both ends and more shaped like a loempia. definitely a recommendation if you like vlammetjes.
there are even way more lesser know snacks, like all the rolls (sate, shoarma, smul) and many more but the ones listed above seem to be the ones only dutch people actually know about and never get mentioned in these sort of videos, give em a try 👍
I never had a kaassouffle with sweet chili sauce, but that is such a great idea! How come I never thought of this myself. I have to try it

Fun fact, below the rivers, a lot of snackbars will make a frikandel speciaal with curry mayo, onions and peanut sauce.
(and usually they'll have a sign that says that their "speciaal" has peanut sauce (satésaus/pindasaus) probably to warn those with an allergy to order it without the peanut sauce)

Oh... if you like broodje frikandel special, try a broodje Mexicano with data sauce (or mayo). Or do both and choose broodje Mexicano oorlog (mayo, sata and unions)

The goulashkroket is the best without any sauce. A picanto is really nice with saté sauce.
My favorite is the Viandel. If you love frikandel, you will probably like this too! It is a frikandel but has an extra layer around it which makes it crispy
Seriously, if there is anything I miss, it's probably Dutch snackbar food.
As someone with celiac disease it is exceptionally hard to come by gluten-free variants, and then there is the situation of having to fry them yourself which can be difficult with the gluten-free variants as well.

You have to try this: ragouzi, sitostick with sate sauce, Grizzly with chilli sauce, worstenbroodje with sate sauce, Smulrol mayo, Shoarmarol. Those are my favorites, hopefully they will be yours too!
Your right! I always eat the special snacks such as sitostick, smulrol and grizzly at a snackbar. I hope they will try them as well. I eat those without sauce. That 's for me the best.
Kaas souffle, nasischijf and frikandel speciaal are my favorites but kroketten and broodje hamburger speciaal mét sla, ei, augurk, tomaat en komkommer are good too!
Bram Ladager is well known, I live in the Far East of the Netherlands (Enschede) and somehow I know that name from the Rotterdam area... Dude must have fried some good stuff in his days (I presume it's now run by his ancestors)

A Pikanto used to be called a Gehaktstaaf, as a cilinder version of a Gehaktbal.
The Gehaktbal is the meat they use for a Bereklauw...its just a deepfried and slightly spiced "meat"ball with onions.
I did miss the Viandel, obviously the plain old Gehaktbal and the Sitostick.
Viandel is chicken/beef mix with a crispy lumpia like outside and the Sitostick is a breaded chicken/turkey/onion shaslik. (You might have to head a bit further South to find them though)
Oh and every single deepfried snack is good with mayo by the way, but a mild mustard is honestly a good second.
My standard order here at Friture Pam Pam (kind of a local legend tbh) is a grote friet Zuurvlees, 2 Frikandellen and a Pikanto. :D
You guys could also try: Lihanboutje, Kikastick (or sitostick), broodje warmvlees with pindasaus, satekroket (prefferably on a white bun), hamkaassouffle. Thanks for your video's they are very fun to watch. 👌🏻

*** = Pindasaus is essentially just a thick peanut butter sauce, sort-of comes from our history with Indonesia, it's also wrongly known as "satesaus" because we like it with "sate", which are skewers of meat that we also eat the same peanut sauce with.
Technically we butchered the sauce & sate and they not longer really count as Indonesian food. Pindasaus is not meant to be made with peanut butter (like we do) & sate is supposed to be chicken & ham (but 95% of places that sell "sate" in NL just sell chicken skewers) but eh, even if its different i can still definitely recommend "sate met pindasaus" for a future video 🤷♂😉
we’ve had kapsalon a few times on the channel - i know some snack bars sell it but i’ve personally not seen it in a snack bar myself
and i’m so glad you wrote that about sate and pindasaus - i was trying to understand the difference and that seemed to be what it was, though i think some snack bars do sell a more authentic satesaus alongside pindasaus?

In Belgium we have also very good snack bar food like Julientje (fries, satéspices, stoofvleessauce, mayonaise, dryed onions and slices viandel). My favorites are Lucifer, Loempidel and Ribster. But I like also Grizzly and Mammoet with Mammoetsauce
when my nut and milk allergy werent as bad my absolute favorite snack was the trio sate.
Do need to say this is a ssnack you find in overijsel maybe drenthe or achterhoek but not in the west or extreme north for what i know.
i know enough times i wanted to order it and the cafetaria owner never heard of it.

What you really should try is Broodje Taartaar met Uitjes en Curry, real yummi.
Bram Ladage is certainly the best of the best when it comes to 'big snackbar-food'.
As mentioned before in the comments, the Berenklauw, or as we call them Berenhap, can not go without sateh-saus. Also good for you to know that not all specialsauce is with curry. In my region special is with ketchup in stead of curry.
Next time, try if you can find a 'lihanboutje' (lee-hán bauwtje) somewhere. It is an old snackbar snack even I don't understand.
If you get the chance since not very establishment makes it. You should order a hawaii stick. Ist a picanto, cut up with pineapple in between on a stick. you should eat it with peanut sauce or sate saus as we call it. Also, the berenhap needs peanut sauce, also there is a battered berenhap which is slightly spicier. Over here, what you call bereklauw is a Spoetnik and it's eaten with curry sauce

Definitely frikandel speciaal (with 'curry' like you had, not with ketchup) or mexicano with sateh (saté, peanut sauce).
Spicy bamischijf and Mexicano are my favorites at the moment, but it wil change in time and then it’s something else.

My favorite snacks by far are the kaassoufflé and the frikandel speciaal. I would not likely choose a snack because it is vegetarian, but that does not mean I would skip a nice bamischijf. I do think the right sauce can make a lot of difference. I would never order a berenklauw without peanut sauce for example. Or chicken nuggets without Smoked BBQ sauce. The sauce can really completerend a snack and push it closer towards those hard to earn 5 stroopwafels.
I love bitterballen, they go very well with different sauces. Beers are mandatory though. The kroket does not do much for me, other than size matters. I mean, when I crave a broodje kroket (with mayonaise or mosterd), bitterballen won’t cut it.
But when I really crave a vegetarian snack, I cut an avocado in half, remove the pit, don’t remove the skin add mozzarella, a slice of tomato and some salt and peper and pop it in the air fryer. And when they are done, I take a small spoon and scoop them out and enjoy…

You guys should try the Eierbal. Best snack ever! Imagine a round kroket with -of course- ragoût, size tennisball, but with a boiled egg inside of it. Combined with a splash of mustard and you're in Heaven! ;-)
Btw; although the eierbal gets more and more rural exposure, it's almost solely sold in Groningen (the provence) -because Groningers keep insisting it's invented there-, and in some parts of Friesland and Drenthe. And by some daredevils in the Randstad.
Favourite thing for me is: Mexicano (Mora Mexicano's they are called Carrero), Kaassouflé and a gehaktsstaaf (pikanto), I enjoy the gehaktstaaf (pikanto) more than a Frikandel, although BECKERS frikandellen are the GOAT (of the frikandellen you can get imo)

that Mexicano "meat" sounds like a McRib version of a "bullet" I had in Belgium - large meatball sausage item cut most of the way down into segments (like the English Christmas chocolate orange) then fried and the segments open up in a blooming onion fashion bite size for dipping

You really should go to a snackbar in Belgium sometime, they have even more snacks there, and lots more sauces to put on fries too. The only snack I eat regularly at home, and sometimes from a snackbar, is the frikadel. I don't like them when they are only from chicken meat, there has to be some other meat in there for the flavor. The original recipe was pork and horse, because that was really cheap meat when the snack was invented in the early fifties. Horse meat is really expensive today, it can cost up to 60 euros a kilogram (good beef is 25-30 euros per kg).
Berenklauw should really be with peanutsauce on the side.

The culinary tradition of adding chopped raw onions to any food comes, in my opinion, from the Dutch raw herring, served with onions.
Traditionally, ever since the Dutch Golden Age, refrigeration was not invented untill the 20th century so chopped raw onions were added to hide any bad odours or even bad taste.
