Planter's Punch | How to Drink

  • The Planter's Punch is the foundational formula for a great number of Tiki Drinks, but it's also got its roots in oppression, genocide and slavery.
    **********************************
    One of Sour, two of sweet, three of strong, four of weak- or so the old rhyme goes. That's the roots formula for this drink, the Planter's Punch, and even though the Planter's Inn in Charleston South Carolina lays claim to the creation of this drink, there's almost no way that could possibly be true. The version I'm presenting here is a roots version pulled from the pages of the fantastic Smuggler's Cove by Martin Cate, not the gussied up version served by Trader Vic or Don the Beachcomber. It's a delicious drink, perfect for the dog days of summer, refreshing and cool and honestly perfect. I declare it The Drink of Summer in fact! But there's no way in hell it was "invented" at the Planter's Inn. Watch the video for more!
    Planter's Punch
    1 oz. or 30 ml. Lime Juice
    .75 oz. or 22 ml. Demerara Syrup
    .25 oz. or 8 ml. AllSpice Dram
    3 oz. or 90 ml. Jamaica Rum
    Two Dashes Angostura Bitters
    Shake over ice
    open pour
    garnish with mint

      I agree! Maybe give us some interpretations of previous drinks you've done using more readily available alcohols. It's hard to find the vast majority of what you're using out here in the "sticks".

      Agreed. I don't think I've made more than maybe 1 or 2 of the last 10-15 drinks or so on this channel, mostly because the ingredients are just too hard to find or you need to make them yourself. Or the drink is some kind of gimmicky thing from an obscure show with Trinidad chilies, nectar of the corpse flower, anchovies, llama spit and cask strength 35yr rum aged in sherry casks from Belaruse, that is impossible to find, but a necessity in the drink.

    For a great many people they hear "rum" and think of the British Navy, or maybe Captain Jack Sparrow. One of the most underappreciated spirits, and it warms my heart that you embraced Tiki, which is a monument to that finest of funky refreshments.     while i generally enjoy jamaican rum a bit more than barbados rum, i really think you can't go wrong with a traditional barbados rum punch. 1:2:3:4 specs - lime, sugar syrup, barbados rum, and ice, plus like 4 dashes of angostura and garnish with fresh grated nutmeg. the nutmeg is super key to the flavor profile-and drink it from the glass, not with a straw. the way i've seen it done, you build a big batch and let it marry overnight then pour over cubed ice so tiny ice chips don't get in the way like they would with crushed or cracked. but i'm not bajan, so maybe my assessment is slightly off.

      Nick Dank I had my first experience with this style in St. Lucia on my honeymoon. They called it St Lucia rum punch but it’s literally the same recipe. The nutmeg is a wonderful addition. That drink is what sent me down the rum rabbit hole

      @@nickentros kinda same for me...prior to having rum punch in barbados i had only had captain morgan and bacardi in rum & cokes. it's been a long time since then, and i've now got a bar at home fully stocked with 6-10 different rums at any time, plus homemade falernum and pimento dram so i can get as tiki as i please haha

    I went on a tour of the Appleton Estate rum factory. They gave us all the rum punch we wanted...and got to taste each of the varieties. Anytime I see the brand now....I have find memories of that trip!!!

    I've heard the rhyme referred to how English sailors used to make punch, taken from the Hindi word for the number five. One part sour (limes), two parts sweet (demerara sugar), three of strong (Batavia), and four of weak (Earl Grey tea), plus spice (nutmeg), coming to five, in total.

    I would love to see an episode your take on variations on the Planter's Punch formula. From personal experience, I used the formula once for a whiskey punch. It was a real hit at the party I brought it to.

    Cognac 30ml
    Aged Rum 30ml
    Giffard Peach Liqueur 15ml
    Lemon Juice 22.5ml
    Orgeat 15ml
    Dash of angostura
    Shaken strained over ice in a pint glass
    Topped with 4oz of Lemon Shandy

    I have watched your channel for some time now. I finally broke down and bought a good bottle of rum and tried it out. You don’t realize how much of this drink is just straight booze tell you are poring it into the mixer. I enjoyed the drink greatly however in the future I’m going to put a little less rum in so I can drink more then one.

    I use this formula to make "Iced Tea" for my family picnic every year, each part being 750ml, the sour being Lime Juice, and the "weak" being black tea. Needless to say, the family always asks if I'm bring "tea" and I seldom have leftovers...

      Snagged from Alton Brown: 1 part lime, 2 parts demerara (I have recently started using demerara gum syrup for this), 3 parts rum (Not spiced works better, but pick something flavorful), and 4 parts black tea (Not Earl Grey, Irish Breakfast worked good this year). I'll also throw in frozen lime hulls to keep cold but not dilute, or just freeze all them in a block for color/presentation. I big clear dispenser with a bottom tap looks nice.

      Here is a simple harsh recipe: have all your friends come to your house, have a brand new never used plastic tub that is closed in no holes in it, then have each friend bring at least 150 ml of hard liquors and liqueurs, add some chopped up fresh fruit and just mix it all together with ice, trashcan punch:)

    Went to our first Portland Tike bar - never got this far down the classics list on an amazing drink menu (Hale Pele). I need to say - a few weeks ago, I went looking for Smith & Cross online.     I have been to smuggler’s cove! Really interesting atmosphere and great drinks (obviously). Their cocktails inspired me to start using velvet falernum, good stuff.

    Had an idea you might be interested in: Are you familiar with the song Alligator Wine by Screamin' Jay Hawkins? Might make a good October episode, being as he's got alot of Halloween swagger about him.
    I propose making a drink equivalent to the Alligator Wine recipe:
    Take the blood out of an alligator (blood orange?)
    Take the left eye out of a fish (olive? or maybe lychee?)
    Take the skin off of a frog (lime peel?)
    And mix it all up in a dish
    Add a cup of grease (I always thought he was saying "green" though) swamp water (IDK, some sorta booze)
    Then count from one to nine
    Spit over your left shoulder (probably intended to spit in the Devil's eyes, like the spilled salt superstition)
    You got Alligator Wine

    Years ago I was in Colonial Williamsburg, they were serving a drink they called punch which was rum, sugar, water & lemon juice. They had another they called punch royale which was lime juice instead of the lemon juice. The menu said you could have it made with your favorite spirit. I ordered a bourbon punch royale and the waiter seemed energized with how much he liked taking that order. I had a couple and my wife who is not a whiskey drinker sipped it and liked it so much she ordered her own.
