What I loved to see was that you can use all the different sorts of fish that you happen to catch. In (much of) Europe the fishermen are told that on any day they can only catch one particular named variety such as "today you can all only catch squid" (this is somehow supposed to preserve the fish stocks!) so when they pull in their nets they have to throw back everything that's not squid and a lot of those will not survive by the time they are caught, sorted and returned. Don't fully understand the logic of that. Seems far more sensible to make a smaller catch and use it all.
