Lysa Arryn has a very large fighting force of veterans and a castle that is inpenetrable, yes she will absolutely be safe if she doesnt enter the war.
The show doesn't explain the "undead" very well. There's white walkers and there's wights. Wights are simply dead, decaying humans reanimated. White walkers are almost a different species. You can tell by the way they look. There's more, but the show does do a good job w/ the rest in due course.
Maps are available to see online and are available for purchase. They contain no spoilers. They do help.
GOT displays a lot of gruesome deaths and I was hooked on this show 😂

In the book the Syrio fight scene was a lot more graphic. One of the Lannister soldiers lost an eye, and Syrio shattered another's knee cap

There is no way of scientifically proving Joffrey's parentage but someone in the books says that people would be convinced by just looking at one of Robert's bastards. This point was made in the show by Ned recognising one of them after just looking at his face.
It doesn't matter, though. People don't care about it as much as they care about their own safety and peace. Most will still prefer Joffrey to civil war.

There was a quote from the TV series Babylon 5 that sums up the people in GOTs perfectly: "No one here is what he seems."
BTW, if you want a scifi series that involves the same sort of intrigue as GOT, I highly recommend Babylon 5, which had a five year story arc with three additional movies.

You are a very clever viewer. All I will say about your question is that the White Walkers are a slow burn & your thoughts about the war are very apt for season 2. You will be getting all the answers you have of the White Walkers. But it might be important to point out something about them.
There are White Walkers and there are wights...people & living things they've risen from the dead & have control over to be their army. That's what you saw in this episode. And as you can imagine, it takes quite a bit to kill an undead. Jon gave it several killing blows to any regular person & it just kept coming like nothing happened until it was burnt.
That's one reason why the Night's Watch & Wildlings burn their dead. It may seem like tradition but sometimes there's good reasons behind tradition.
You're ahead in this series, but by now you'll know. After this one the rollercoaster kicks into high gear
