This is really fun. I would also take three levels of Beast Barbarian. _Rage_ gives you advantage on Strength checks, perfect for grappling, as well as additional damage and defence. And while you can't cast of concentrate on spells, _Disguise Self_ just lasts for an hour without concentration. _Unarmored Defense_ means you can ditch armour and shields, and _Form of the Beast_ gives you a bite attack or defensive tail (another pseudopod). Or claws, if but since you already do 1d6 using unarmed strikes, the only thing they would give you is slashing instead of bludgeoning damage.
I loved the idea of taming a mimic. Especially if you're a merchant who wants to avoid thieves which I played as once. But playing as one awakened some rather creative scenarios for me to pull.
So how i would build this character would be the following: Go Fighter 6 taking unarmed fighting style, and fighting initiate Superior Technique, and Martial Adept. These give you more uses of your maneuvers and they scale when you reach Battlemaster Level 10. Slide over to Genie Warlock one; Flavor this as a Broken Helm of Intellect (The thing that woke you into sentience). Go dao and then stragiht back into fighter for 2 more levels and take eldritch adept giving you the Mask of Many Faces; You can always take your warlock dip and feat earlier should you want that shifting ability sooner, and at Character level 11; you have 7d10 worth of superiority die. Disguise self at will. Short rest in a bottle. Hex for all your attacks.

I’m surprised you didn’t go rogue fighter here
i need to hit the slight spellcasting tho, and weirdly enough, sneak attack wouldn't work well with the mimic build
