Great Job… you made me hungry and home sick, cause I live in NYC family is in Malta I was born there but my family came here until my parents retired and moved back along with my 2 brothers who married Maltese women and I stayed in states married a New York… I try to make Maltese dishes too recipes from my mother not from my Nannas, cause one always made food raw she had no patience lol my mother would say, and other did things by eye. Keep up the good work and sorry for the long message… us Maltese can keep going with stories haha…

You and your boyfriend will love it has a fun vibe not that I go out I go to work in city and then go home fast to beat the rush. New York has a lot of Maltese and Gozo people living in it and when I hear someone besides family member talking I get so excited. Where are you located at? But I finally wrote up the recipe for the dates and walnuts pie (torta tat-tamal) in English :) Here it is: Pie crust: - 200g AP Flour - 100g unsalted butter, cold and cubed - 100g sugar - 1 medium egg - Pinch of salt - Some water as needed Filling: - 250g pitted dates chopped in small pieces - 200g walbuts chopped roughly - 100g AP flour - 2 medium eggs (whites and yolk separated) - 1/2 tsp baking powder - 1 tsp vanilla extract Method for the pastry: 1. In a large bowl, mix the flour, sugar, and salt. 2. Add the cold, cubed butter to the dry ingredients. With a pastry cutter or simply using your fingertips, rub the butter into the flour until the mixture resembles coarse breadcrumbs. You can also use a food processor. Just scatter the cold butter over the flour mixture and pulse for 8-10 times. 3. Beat the egg in a separate bowl. Make a well in the center of the mixture. Pour in the beaten egg and mix gently with a fork or your hands until the dough starts to come together. If using a food processor, simply pour in the egg and pulse until the dough begins to clump together. 4. If the dough feels dry or crumbly, add 1 teaspoon of water at a time until it forms a cohesive ball. Avoid overworking the dough. 5. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes before rolling out. Method for the filling: 1. Beat the egg whites with a hand mixer until stiff peaks. 2. Beat the yolk separately and then mix it in with the egg whites. 3. Mix in the sugar until just incorporated. Then mix in the vanilla extract. 4. Mix the baking powder into the flour, and then fold them into the egg mixture. 5. Mix in the dates and walnuts until well combined. The mixture should have a thick and clumpy consistency. Assembly and baking: 1. Roll out the chilled pie dough evenly, taking care not to roll it too thin to prevent tearing. 2. Using your rolling pin, gently transfer the dough to the pie dish. If you're using a non-stick dish, coat it with butter to ensure the dough doesn’t stick. 3. Trim any excess dough hanging over the edges, or fold it inward for a thicker crust. If desired, crimp the edges for a decorative finish. 4. Pour the filling into the crust. Since the mixture will be thick, spread it out evenly with a spatula or the back of a spoon. 5. Bake in a preheated oven at 180°C for 30-40 minutes, or until the crust is golden. If your oven has hot spots, make sure to turn it half-way to ensure even browning. Keep a close eye on it during the final minutes to avoid over-browning. 6. Once baked, let the pie rest for at least 2 hours to allow it to set fully and prevent it from collapsing when sliced. Recipe is for a shallow 28cm pie dish. I had lots of overhang in my crust since I used a 24cm dish, which I folded in rather than discarded since I like a thick edge. The time I made it in the video, I only used 65g of flour which was too little and I ended up with a very soft and moist filling. I made it again and increased the amount of flour to 100g, which gave a much better consistency and texture :)
