OFE UJUJU aka VERONICA COMFORTER
This vegetable is a delight to the Ika speaking people of Edo/Delta state... This vegetable is loved and i grew up eating and loving it too
It is also known as iyeghe in Edo state. For those of us living in areas where we can get fresh leaves of Ujuju. There are ways to preserve them.
You can boil and pound them as soon as you get it then pack in ziplock bags and freeze. whenever you want to use it, you drop it in your soup.
Mine oxidized after staying in my fridge for 2 days but it was still super fresh and tasted very yummy.
You can cook Ujuju on it's own or you can mix it with Ogbono or Okro, I mixed mine with Ogbono seeds.
