  • apple bramble butter recipe:
    1kg apples
    400g blackberries/ bramble fruit
    30ml apple cider vinegar
    200ml apple juice
    150ml water
    1.5c sugar (300g)
    optional: cinnamon, cloves
    rosehip jelly:
    foraged rosehips, frozen overnight and chopped
    optional: 1-2 apples, chopped
    pectin 40ml approx
    water or apple juice to make up to 450ml
    300g/ 1.5c granulated sugar
    boil to 105C or do the frozen plate test to check set. take care not to let it boil over (a few degrees over set point)
