3 Sticks UNsalted Butter (Room Temperature)
2 Cups Brown Sugar
1 Cup Granulated Sugar
5 Large Eggs (Room Temperature)
1 Cup Crushed Pineapple
1- 1.5 Cup Toasted Pecans
1- Cup Roasted Carrots (Freshly Grated)
1/2 Tsp Baking Powder
1/4 Tsp Salt
3 Tsp Cinnamon
1 Tsp Nutmeg
1/4 Tsp Cloves
1/4 Tsp Ginger
***GLAZE
Powdered Sugar
Cream Cheese
Creme Bouquet
Pineapple Juice

I have been paying particular attention to this series of pound cakes you have been doing and I will add you make your Butter Rum pound cake almost exactly how I make mine to the T. I am going to make this recipe of your Carrot Cake Pound Cake tomorrow and let the kitchen staff,etc sample it and see what we all think. If it is a hit with everyone I will definitely let you know. I laughed til I had tears flowing when I watched the video of you making your Eggnog Pound Cake and at the end when (I think the baby's name is Jackson if I am correct but these past few days my brain has been in overload mode due to preparation for Thanksgiving here at the restaurant. But when dude 1 said something about not wanting to share with you on his piece of cake and you started talking to yourself about how yall share everything,etc for so many years....anyway,the baby was making these like cats fighting noises, I was screaming with laughter because it was so perfect for that spot of the video. It was like,look out grand dad,her claws are coming out. 😂🤭

Thank you for this yummy recipe. I like that you added cream cheese to the batter, and also how you recommended washing the cans. This looks like a good recipe. I have added ground cloves to my cake recipes and it adds a nice spicy flavor, but not too much ... just a pinch or two. It also adds flavor to spaghetti sauce. My daughter calls it her secret ingredient for her sauce.

We have a lady in my church who makes this cake for every dinner we have. The thing is she does not like all of the spices so she only uses a little cinnamon, like a 1/4 tsp in the whole cake. People absolutely devour the whole cake like it is a treasure. It makes a pretty cake and you can really see the carrots in it because it is very light.❤
