"Best Sambal" for Nasi Lemak

  • This year Malaysia will be celebrating 59 years of independence from the British on August 31st 2016. So, throughout this month, I'll share some of my favorite food, that is uniquely Malaysian, and I hope you will like them too. I'll start with the most popular breakfast dish in Malaysia, called Nasi Lemak. The basic meals consist of coconut milk rice, Sambal, hard-boiled or fried or egg, cucumber, slices, fried anchovies and peanuts. Other great accompaniments are deep-fried chicken, Sambal Sotong Kering, etc.
    This is my “Best Sambal” recipe for Nasi Lemak. There is a bit of prep involved, but the result is worth the effort. The sambal is delicious, slightly spicy and aromatic. It compliments very well with the traditional-styled steamed coconut rice, which I am going to share with you on my next post.
    Best Sambal (Nasi Lemak Sambal)
    Ingredients
    1) 200 grams of Shallots
    2 Pieces Thinly Slice Galangal
    4 to 5 Tbsp of Peanut Oil
    2) 150 grams Fresh Red Chilies, chopped
    4 Tbsp of Dried Shrimps, soaked for 20 minutes
    4 to 5 Tbsp of Peanut Oil
    3) 50 grams Dried Chilies, cut into smaller segments, soaked in boiling water for 20 minutes, drain well
    4 to 5 Tbsp Peanut Oil
    2 tsp Roasted Belacan, crumbled
    3 Tbsp Sugar
    30 grams Tamarind Paste mix with 1/2 cup of Water, discard seeds
    1 Large Red Onion, halved, sliced
    3 Pandan Leaf, knotted
    Sea Salt, to taste
    Peanut for frying

    Hi im a muslim-filipino maranao tribe, i really love malaysian foods because most of their dishes are halal, thqnk you for this receipe i'll absolutely gonna try this one, my family will surely love this one because maranaos love spicy foods and maranaos are little bit common in Malaysian interms on food and language, again thank youuu

    After watching this on Sunday , i had the chance to try it out as i was planning to cook nasi lemak . It wasn't hard to follow and i was rather please with the final results .Wish it was more spicy . Thank you for the sambal recipe this is a keeper!

    The secret taste is in the galangal and fresh cilli paste. Most other sambal that I have viewed do not use these two ingredients. Thank you so much for sharing

      cant find any galangal here. any alternative for it. i saw one recipe using turmeric instead. is it alright?

      @@haemiclist3503 ginger has kinda similar taste of galangal but it will not taste as good as galangal

    Thank you for sharing your recipe in weight! This really takes the variable out of working out how much is 20 chilies or 20 shallots. Differing sizes of each type of ingredient. I made it without the sliced red onion and less dried chilies. It tastes like nasi lemak sambal.

    Galangal/lengkuas in the nasi lemak sambal?? Hmm. This is new for me, and I'm a Malay and a Malaysian. I think nasi lemak sambal recipes in most parts of Malaysia does not put in galangal but ginger, galangal is for rendang. But hey, who's to say what version is right or wrong! I might even try to put galangal the next time I make nasi lemak sambal, just to find out how it tastes, I have a healthy galangal bush in my yard besides a healthy bush fo ginger too!

      Just a tiny piece of Lengkuas in this recipe. If too much it will over power the sambal taste...you can omit it too. Thanks for the comment and Happy New Year! (NL bungkus is till the best! Ha Ha)

      galangal and also some anchovy paste (the one you get from Italian stores for pasta sauce)......magnifique when added to nasi lemak sambal. It's sometimes impossible, but sometimes in very certain circumstances you can enhance the flavour of the traditional taste

    usually we don't put galanggal to make sambal nasi lemak.. it taste bitter.. just blend onion, chillies ..fry it until the oils come out..add tamarind paste,salt, sugar, palm sugar, sliced onion and fried anchovies.. simple yet very tasty

      actually it works....don't ask how or why...it just does. As the poster says, just a small amount.
      I've also added some anchovy paste. I like the salty fishy taste of pickled anchovies so either the anchovies in olive oil in a jar, or even more convenient the big toothpaste like pasta-sauce enhancing anchovy paste you may be able to get from Italian stores. Not sure what you can get in Malaysia though.

      ATK Girlfriends but original a.k.a authentic recipe no galanggal though. I’m Malaysian, my mum never put it. She felt weird when i told her about put in galanggal in sambal nasi lemak 😂

    Nice recipe!
    Is this more on the sweet/jam side and only slightly spicy? Or, on the more spicy side?
    I prefer sweet jam-like Sambal! 😋

      Thanks for the comment. This recipe is slightly spicy, but it depend on the spiciness of the chili too. You can mix some milder chili for sweeter Sambal. Hope this help.

      I usually wrap the belachan with aluminum foil and roast it on the stove with low fire. Then mix with the paste. Thanks.

      Remove some of the seeds... That'll help reduce the heat from the sambal

    Hi hi...when blending the shallots and galangal , we need to put in oil together to blend , as per the instruction ?

      It's easier to blend with oil. You can use a good chopper then grind without any oil. Hope this help.

    What should I do if I want a super spicy sambal? Add chilli? Will the proportion cause a problem?

      You can use extra dried chilies and perhaps use a mixture of regular redf & Bird's eye chilies too.

      You can use white onion..they have a sharper and more pungent flavor than the red ones.

      There's no brand. (bought from a small vendor in Kuala Lumpur)
