The NFL wasn't "forced" to change the overtime rules. They cared nothing for that rule when it affected Mahomes against the Patriots. But, they couldn't have the Chiefs winning if they could help it, so they changed the rules to benefit Josh Allen and his crying fans.

Refs get involved very much of the time because players are pushing the limits of what is allowed, and maybe a bit beyond, especially in important ("do-or-die") moments. They essentially DARE the refs to make the call. Add to that, that in the past 1-3 years, refs have been swayed by all of the whining from defensive-minded people, and let defenders get away with so much holding and potential PI, especially with the grabbing/turning of receivers in the middle of the field (just before the ball arrives), that people are now complaining when ANY call is made. On the offensive side of the ball, big name receivers more and more have been getting away with the well-timed push-off, to the point that seemingly ANY OPI call leads to great wailing and gnashing of teeth. Finally, teams playing the Chiefs naturally feel just a bit more desperate, feeling like they are behind even when they are ahead, and are more likely to push those limits, particularly on 3rd (or 4th) down in the 4th quarter. The "big impact" calls will get made more often in these situations. Refs just need to do their best, and BOTH teams have to be willing to move past any missed opportunities, no matter whether or not a "bad" call or "missed" call happened. Let's see some great football, and as few injuries as possible. Remember that the winner of this one still has to beat the Eagles or Commanders in a couple of weeks!
Added note: most plays have potential holding and/or PI calls. As noted above, players tend to push the boundaries of what's allowed. Refs often warn players during the game, that they will be called if they see it again. Sometimes, a less-egregious repeat of the same action will result in a penalty later in the game. That, or your number is 74. Either way, it's a bad look for the refs, but as fans we have to accept that it's going to happen. I've lost count of the number of missed holding calls on O-linemen that I spot in real time, that result in big plays for the opposing team late in the game. But what are you going to do, wait for the world to become fair?
