    what is that he uses to cook the scallops at 1:57? it's not a normal stove with a fire

      Its called a plancha, the heat is underneath and the metal heats up like a giant frying pan. They can either be gas or electric

    Love Nigels cooking and Paul Heathcotes too. Proper Lancashire. Ate at Northcote Manor about 15 years ago and returned 10 years later and it had gone all snobby. Shame. Custard tart and lamb rump were incredibly good though waiting staff too professional/Mayfair style service. Won't be back.

    Looks like the type of scallop you would get in a bad wedding...Just raw, boring scallop dish with dreams of being a fine dining dish.

      Looks nice to me. Subtle, a much underrated quality. If you're going to use a scallop the dish should taste of scallop first and foremost, with other elements downplayed because it's a lovely flavour but not a big flavour.
