Thats not blood. While it would have been prettier if it wasn't there its perfectly safe to consume. Letting the meat rest helps to combat this.

Blue cheese on fillet steak I think will over power it, yes a sauce is good but I personally think it’s to much
you know its gonna be bad when the mash is plated with an ice cream scoop and just left in a ball.
Presentation wise, that’s horrific. I might not know how to cook everything as I am still learning, but I do know my way around plating.
If you dont LOVE blue cheese do not make this. But if you do, its out of this world =D
