Yup he polymers “plasticize “ the mortar! That’s why it moves the way it does! 27 year concrete guy here. I use all the polymer materials all the time. Looking good tho bro!!
I grew up in a log home that was built in the early (19) teens. Got a bit of a preview of the process early. I've seen news paper, Deer Moss and Horse turd and mud used as chinking. It is all good, but requires regular maintenance. One Old Timer told me the best of the best was.........a sack of Portland, mixed with your desired color of oil base paint. Mix to the consistency of putty and use same as mortar. It never totally dries out, never changes much in color, remains elastic with hot and cold weather and never pulls seal. No more air leaks. .......

I use a mortar piping bag to install, seems to work pretty good. I’ll agree it’s all in mortar consistency.
