Wrong recipe for the Illy. This is traditional IT espresso blend/roast. Max 14 grams in, 50gr out, max 20 sec. It's a dark roast, following the "moddern" standard you end up with overextracted, burnt espresso. There's actually official Illy paper with the recipe.
Have you considered grind the bean coarser? It's ok if you like it like that. But experts don't recommend an outcome of 48 grs of coffee from 21 grs in about one minute of extraction. The extraction should have been between 25 and 35 secs for a ratio in between 1:2 or 1:3. Just saying. As I said, if that is what you like then more power to you :)
