Yep, no question this is now my favorite recipe. The high heat leaves a nice crust while the veggie is tender. I line the sheets with foil so cleanup is easy and it does NOT prevent the crust from forming. It looks so delicious and I want to try this recipe. But is there any reason to cover with foil at the beginning of cooking (for 5minutes)? From what I know, aluminum foil in the very high temperature is not healthy and should be avoided. Would it be okay to bake without foil?

at what temperature do you steam and also roast in the oven you only have the pre-heat time?

I tried today, only 2 middle steaks held the shape, the rest fell apart. Maybe next time I will just separate florets instead of slicing
